  2. I’ve been wanting to go to Pink Pistachio (@pinkpistachio_) for a hot minute now and have been vicariously living through all their posts. They’ve gotten popular really fast considering they’ve been open for only a little over a month now. While the vibes and ambiance are cute and “girly”, the food isn’t necessarily “dainty” as one would typically think. They’ve got a full ribeye steak, lamb chops, burgers too for everyone to enjoy, although based on my observation, you will find more women here than men! lol My favorites were the pistachio latte, eggs benedict, ribeye steak, lamb chops, and nutella french toast. I’m a sucker for tres leches (it’s my favorite type of cake) and their rose one was very well-made, nicely soaked cake base that doesn’t disintegrate, and it’s not too sweet, which I know is considered as a compliment. 😂 You can also go here simply for tea time and light bites. They serve their teas in the cute teapot and glasses and have a large selection of herbal and caffeinated. This is like a halal version of Prince Tea House, but better lol. Chicken is by hand. Recipe below! #persianfood #rice #crunchy PERFECT TAHDIG RECIPE 2 cups basmati rice Kosher salt ¼ cup canola oil 2 Tbsps plain yogurt 1/3 cup brewed saffron water 3 Tbsps unsalted butter, thinly sliced ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. In a large bowl, cover the rice with cold water. Agitate rice to release starch, then pour off water. Repeat 7-10 times, until water runs clear. Think of this as rice-aided meditation. Do not rush this. Cover rice with water, add 2 Tsps of salt and let soak for 30 mins, then drain. 2. Fill a 5-quart nonstick Dutch oven half full with water, bring to a roaring boil and add 2 Tbsps salt. Add rice and boil over high heat until al dente; approx. 5 to 8 mins, depending on your rice (do NOT overcook). Let stand for 1 min, then drain. 3. Put oil in the bottom of a non-stick Dutch oven. Whisk yogurt, and 2 Tbsps of brewed saffron water and drizzle over the oil into pot. Gently scatter 1/4 of rice into pot (you want it to stay fluffy) and season with salt. This will become your magical tahdig! Scatter in remaining rice to create a mound. 4. Cover pot and set over moderately high heat until it starts to steam, about 5 mins. Uncover rice and drizzle with 2 Tbsps of brewed saffron and 1/4 cup of boiling water. Scatter butter slices on top. Cover pot with parchment paper, then cover tightly with a lid. Cook on a heat diffuser (so tahdig doesn’t burn) over moderately low heat until rice is tender and very fragrant, approx 45 mins. 5. Wait till husband comes in from shoveling snow and ask him to film you inverting your tahdig. Do brief happy dance, then enjoy!

Add saffron rice mixture to bottom of pot and spread to evenly cover. Season with salt. This will become your magical tahdig! Scatter in remaining rice to create a fluffy mound. 4. Cover pot and set over moderately high heat until it starts to steam, about 5 mins. Uncover rice and drizzle with 2 more Tbsps of brewed saffron and 1/4 cup of boiling water. Scatter butter slices on top. Cover pot with parchment paper or tea towel, then cover tightly with a lid. Cook, on a heat diffuser if possible so tahdig doesn’t burn, over moderately low heat until rice is tender and very fragrant, approx 45 mins. Carefully invert onto a large platter! 5. We served it with Khoresh Fesenjan (chicken and pomegranate stew), Salad Shirazi and Mast-o-Khiar (cucumber and herb yogurt). 🤗 #womanlifefreedom #zanzendegiazadi #iranianfood #iran #rice #tahdig
