Total cost (approx): $4.50 Ingredients: 1/2 cup oil (I use canola oil, but use any oil you like or melted butter!) 1 cup sugar 1 cup plain yogurt 2 eggs (if you don’t have eggs, use 2 grated apples or flax eggs) Zest of 3 lemons (hopefully you know someone with a lemon tree - they are everywhere in NZ atm!) 2 cups self raising flour (or 2 cup plain and 2 tsp baking powder) A pinch of salt For the syrup: Juice of 3 lemons (I got these for free) 1/2 cup sugar Method: Whisk together oil, sugar, yogurt, eggs and lemon zest until combined. Whisk in the flour and salt until just combined. Pour into a greased and lined loaf pan or cake tin (21cm). Bake at 170 degrees Celsius for around 40-50 minutes, or until a skewer, when inserted in the middle, comes out clean! Next make the syrup which is optional: combine the juice of the lemons and 1/2 cup sugar in a pot. Heat it until the sugar has melted, and allow it to cool down for at least 5 minutes. Pierce lots of holes in the cake and pour the syrup evenly over. Allow to sit for at least 10 minutes, for longer is better if you have patience (which I don’t hehe) Enjoy! To make gluten free: use gf flour and 2 tsp baking powder, or ground almonds, 1tbsp cornflour and 2 tsp baking powder. To make dairy free: use df yogurt or milk instead of yogurt. To make vegan: use grated apples instead of egg and dairy free yogurt.

Fijian Chicken Curry Recipe: Ingredients: • 4 onions, diced (a food processor can help) • 3 garlic cloves, sliced • 1 thumb-sized piece of ginger, grated or finely chopped • 2 tbsp oil (e.g., vegetable or sunflower) • 1 tsp mustard seeds • 1 tsp cumin seeds (instead of fennel seeds) • 2 tbsp curry powder • 1 tbsp turmeric • 1 tsp salt (plus more to taste) • 1 kg chicken nibbles or bone-in chicken pieces • 1 can tinned tomatoes • Optional: water or chicken stock (if needed, for sauce consistency) • 1 1⁄2 cups rice Method: 1️⃣ Prep the onions: Dice 4 onions. Use a food processor if you’d like to save time. 2️⃣ Toast the spices: Heat 2 tablespoons of oil in a large pan over medium heat. Add 1 tsp mustard seeds and 1 tsp cumin seeds, followed by 2 tbsp curry powder and 1 tsp turmeric. Stir and fry for about 2 minutes, until the spices are fragrant. 3️⃣ Cook the aromatics: Add the diced onions, 3 sliced garlic cloves, and the grated or finely chopped ginger. Season with a good pinch of salt. Cook on medium-low for at least 20 minutes, stirring occasionally. Add a small splash of water if the mixture starts to stick. 4️⃣ Add chicken and tomatoes: Stir in 1 kg chicken nibbles (or other bone-in chicken) and 1 can of tinned tomatoes. Season again with salt to taste. 5️⃣ Simmer: Cover the pan and simmer on low for 2 hours, stirring occasionally. The tomatoes will create a rich sauce. If the mixture becomes too dry, add a splash of water or chicken stock to loosen. #newZealand #Aotearoa #Australia #FoodPrices

Thank you for the most delicious parāoa 🤤 Creamed pāua recipe from Kai - 2-3 pāua, shelled and cleaned (about 400g out of shell) 25g butter 1 teaspoon olive oil 1 small onion, diced 3 cloves garlic, minced or finely chopped 1 1⁄2 cups cream - fresh or UHT salt and pepper To clean the pāua, make sure the teeth and gut sac are removed completely, and wash and rub the pāua thoroughly under cold running water. Tenderise the whole pāua by placing it on a wooden chopping board, covered in a tea towel to prevent it slipping and sliding, and banging it with a meat tenderiser on both sides, making sure you tenderise the edges, which tend to be quite tough. For minced pāua, chop into smaller pieces and put it through a mincer or high-speed blender (note that consistency will be different in a blender, and some may get stuck around the blade; a meat mincer is preferable). For sliced pāua, leave whole or cut in half lengthways, and then slice thinly (5 millimetres) with a sharp knife. Heat the butter and olive oil in a skillet or frying pan over a medium heat. Add the onion and garlic and cook until softened, but not brown. Add the pāua and sauté it, stirring and turning frequently to ensure even cooking. Add the cream and bring to the boil, then turn down to low and allow it to simmer until reduced slightly and thickened. This should only take a few minutes. Season with salt and pepper to taste, and serve immediately 💚
