  2. When @dcberan was chef of Next in Chicago, he had a menu called Paris 1906, with dishes straight out of Auguste Escoffier’s Le Guide Culinaire, the bible of French gastronomy. One of Dave’s courses was the canard à la Rouennaise à la presse, aka the Duck Press. After the good meaty parts of the duck are removed, bones and cavity are medieval torture-pressed through a turn-of-century contraption to extract every last drop of duck jus. All that goes into a sauce of cognac and red wine which, when served with the roast duck breast, sends diners into toe-curling full-body convulsions. Dave’s brought that dish over to @pasjoli.sm in Santa Monica, and somehow refined it to this higher plane of existence. If his presentation doesn’t flip your switch, check your circuitry.   3. This year, to celebrate What’s On The Menu’s 10 year anniversary, I’ll be curating 10 culinary experiences in different cities, that all represent something pivotal in my career. A few years ago, they cut off our supply-stopped paying vendors, tied up their money to buy their competitor. Left stores and employees completely dry. So I went back to working nightlife on weekends just to survive. I’ve been applying to jobs for going on 2 years. And nothing. 8 months ago, thought caught a break. Got hired at a new steakhouse. 3 weeks later? They let me go because / “wasn’t bringing the right people in.” So I got in my entrepreneur bag. 💼 I became a lifestyle architect-the bridge between culture, style, and experiences. I started curating and co-founding my own events: 🎶@fridayjr.co - R&B and slow jam nights at @signaturesteak 💪🏻sundaysweatclubchicago - Sunday morning HIIT workouts focused on fitness, accountability, and community But here’s the real talk: building something from scratch takes time.
