  2. When @dcberan was chef of Next in Chicago, he had a menu called Paris 1906, with dishes straight out of Auguste Escoffier’s Le Guide Culinaire, the bible of French gastronomy. One of Dave’s courses was the canard à la Rouennaise à la presse, aka the Duck Press. After the good meaty parts of the duck are removed, bones and cavity are medieval torture-pressed through a turn-of-century contraption to extract every last drop of duck jus. All that goes into a sauce of cognac and red wine which, when served with the roast duck breast, sends diners into toe-curling full-body convulsions. Dave’s brought that dish over to @pasjoli.sm in Santa Monica, and somehow refined it to this higher plane of existence. If his presentation doesn’t flip your switch, check your circuitry. Like actually top tier 🥯 Soloway - Lincoln Park gem and Ukrainian-owned. Their pastries and drinks are consistently amazing.   1. A whole mood. Before I could get to the point of winning my episode of @cookedwithcannabisnetflix on @netflix I had to take some Ls. I had a lot of emotions in this picture because I remembered them all and what it felt like to lose on a big stage. 2 years prior I lost to @chefmikemoya, who is my friend to this day, at the @hightimesmagazine top cannabis chef SoCal championship round 2017. The L stuck with me and I vowed to never change my methods nor my focus at putting my best on the line every time. Supremely Grateful for every opportunity and chance to improve and push forward. This W is for not giving up and saying Yes when it was time to rise to the occasion. I want to wish thanks to everyone who watched and supported me.
