Truffle Chicago is located in Pilsen and they have all of the best sellers from their takeout only location all in this sit down restaurant. The restaurant is BYOB and the kitchen is open late closing at 2am. Wilma’s is a family owned restaurant that started in Dolton, IL and has recently added their second location to downtown Chicago area. This location has a bar, with drinks that will make forget you had a tough week. On Tuesdays, Wilma’s hosts a karaoke night. The drinks were flowing, the food was good and karaoke was so much fun. I highly suggest checking this place out. Chicago Combo Stuffing ™️ Thanksgiving is a week a way and I'm blessing you with the most Chicago side dish around, my deconstructed Italian beef and sausage combo stuffing/dreessing, complete with sweet peppers, giardniera, and of course au jus. I'm running back this classic recipe that I developed last year. This is how you celebrate Turkey Day, the real Chicago way. Makes about 6 servings and can easily be scaled up. Ingredients: 2 Italian beef sandwiches (sweet and dipped) 1/2 lb Italian sausage 1 cup diced onion 1/2 cup of diced celery 1/2 cup diced carrots 5 garlic cloves minced 2 tbsp italian seasoning 3 tbsp unsalted butter 1 cup mild or hot giardiniera (drained off oil) 2 eggs 1 cup beef stock Salt to taste Method: Seperate beef and sweet peppers from the bread.  Roughly chop the peppers and set aside.  Cut bread into large cubes and spread on a baking sheet.  Bake at 350 F for 25 minutes or until completely dried and toasted.  Place in a large bowl and let cool.  In a skillet, cook off sausage until brown and fat renders, about 6-8 minutes.  Remove from pan and place in a bowl, leaving fat in the skillet. Add 2 tbsp of butter to the reserved fat and add your onion, celery, garlic, pinch of salt, and italian seasoning.  Cook until onions are transluecent, about 5-7 minutes.  Remove from heat and add your reserved sausage, beef, sweet peppers, and drained giardiniera peppers and mix. Let the mixture cool for 10-15 minutes. Whisk eggs with beef stock.   Pour cooled beef mixture over the dried beef bread and add egg/stock mixture and combine.  Pour mixture into a buttered 8x10 baking dish and cover with aluminum foil.  Bake at 400F for 30 minutes covered, and then another 10-15 minutes uncovered until the top is well brown and crisp.  Let rest for 10 minutes, then slice.  Top with au jus and additional giardinera. . . . #thanksgiving #thanksgivingrecipes #Stuffing #italianbeef #giardiniera #chicagofood #Chicago #stuffingrecipe

  1. A whole mood. Before I could get to the point of winning my episode of @cookedwithcannabisnetflix on @netflix I had to take some Ls. I had a lot of emotions in this picture because I remembered them all and what it felt like to lose on a big stage. 2 years prior I lost to @chefmikemoya, who is my friend to this day, at the @hightimesmagazine top cannabis chef SoCal championship round 2017. The L stuck with me and I vowed to never change my methods nor my focus at putting my best on the line every time. Supremely Grateful for every opportunity and chance to improve and push forward. This W is for not giving up and saying Yes when it was time to rise to the occasion. I want to wish thanks to everyone who watched and supported me. The feeling is beyond description, but know I appreciate and love you all for it.

  3. Happy 4/20 everybody! I’m beyond proud to announce that what I’ve been working towards & manifesting for the past decade is finally coming into fruition. I will be one of the first Latino cannabis operators in Illinois with products that I’ve been developing for several years from California to New York and between. I can say that now that I’m ready to step into my own licensed kitchen. This is a project forged by many years of painful dedication and difficult sacrifice. G. 🤤 The food was insane- don't skip on the grilled clams with smoked ramp butter (!!), straciatella with strawberries, crni risotto, and tagliatelle with duck sausage.
