  1. 21 years married today and 44. Was looking at this picture in the kitchen earlier and thinking how is it 10 years ago already. Remember the day well though, thought it would be nice to get some family pictures taken...the poor photographer. When Matthew fell over the equipment and Luke tried to chew through some cables it was suggested maybe we leave the studio and go outside...safe zone. In fairness the last photo session for Amy's Communion...well Matthew had his willy out for half the shots and no one spotted as blended in nicely with his beige chinos. So anyway, framed this one and never went for family photos again. Hard to believe its 21 years, doesn't feel it.   1. LOVE THESE BARS the recipe I consistently make again & again!!! Hope you love them too. Recipe 👇🏻 300g oats 300g dried dates 12 tbsp. unsweetened almond milk 3 tbsp. cacao powder big pinch of salt 1 tsp. vanilla 80g Dark Chocolate choc melted Method In a food processor blend the oats into a flour, add the dried dated and blend until the dates are broken into tiny pieces almost not visible (the mix will have turned to a brownish flour colour). Add the cacao powder, almond milk salt and vanilla and blend into a thick heavy dough. Spoon the mix into a lined bread tin and smooth out over the top. Drizzle over with the melted chocolate. Place in the freezer (15-20 minutes) or fridge for 45 minutes to set.   1. ⚡️❤️🐶 Daffodil “Daffo” McElwain Byrne ❤️ Feb/March 2012 to December 8 2022 🐶❤️⚡️ Thank you so much for all the lovely, kind messages and pawsitive vibes sent to myself, @niallofthenines and Daffo in the last few days. From the first moment Niall and I were handed Daffo @dspcashelter in April 2012, she had a special spark which seemed to burst out of her little body. Naughty, sweet, gas, obsessed with Kong balls, startlingly and inappropriately mean to other dogs, 💯 the Alpha at all times and fiercely loyal to her people, her decade of life was very Big for such a little doggeen. That tremendous spark of hers showed signs of dimming this November, and after a short illness she was diagnosed with a rare adrenal cancer. My heart hasn’t quite caught up with my head in understanding that I won’t see her silly little face again. I am sad but I am also so grateful that, with the help of the amazing team at our local vets here in Clifden @westernvetsclifden I was able to put a stop to her suffering and send her off to the big beach in the sky surrounded with love. I am grateful Niall and I gave this little doggeen such a great life, and grateful that I got to have such a great little pal for so long. I heard my hero @dollyparton say in an interview once that when you have a big heart, you hurt big too. For me, it’s the connection we have with people, pets, and places that make life worth living. Even if it meant my big heart might break a little less, I would never take back any of the love I’ve given out to the world. It’s worth it. Thank you Daffo for being my constant companion in a time of great change and for teaching me that a great way to approach life is to be the person your dog thinks you are. Sleep well, sweet friend xxx until we meet again xxx

  2. I love these photos that @cliodhnaprendergast took of me for The Sunday Times, because she captured how I feel at the moment - so well, happy and free. One reason for that is because I came out to myself, my family and my friends in the last year. I am queer and I am finally proud of it. This is something I kept hidden from myself for twenty years. Even though I would consider myself an lgbtq+ ally, and have seen the beautiful support my family have given my gorgeous trans sister, I think I had internalised so much homophobia growing up in the 80s and 90s that on some deep level it just felt too risky to me to answer the whisper of my queerness. I already felt a little too different as a young teen (I was weird! I still am, but now I understand that it’s one of my strengths) where homophobia was rife. Everywhere, every day. I chose to hide a big part of myself to fit in. Now it’s as if I’m stepping into the full possibility of my life. As I explained it to a new friend, I feel as if I’ve turned my face towards the sun and I am starting to feel its goodness. It is important to me to share this with you because it’s #pridemonth. I feel an even deeper respect than ever for the legendary queer people who have come before me and have made my coming out - overdue as it was - so much easier than it was for them. Thank you. I also strongly believe that shame and secrets are among the most damaging and toxic experiences we humans create for ourselves and for others. Life is so short, and shame burdens it with a heaviness that makes us miss out on so much beauty. I want to dismantle this part of my shame by stepping into the sun. Even if you’re not a beautiful queer person - maybe you’re a gorgeous straight person - you can celebrate #Pride by stepping into the fullness of who you are as a person. Be proud of who you are and of all the strength, learning, love and grit it has taken you to get to where you are today. By doing so, you honour the courage of the people who have gone before you.   3. Nora Ephron once wrote “never marry someone you wouldn’t want to be divorced from” and boy, did I hit the jackpot with Niall. We met 17 years ago. We got married 9 and a half years ago. We separated 4 and a half years ago. On 26 June, we met for a coffee and a stress pastry at Proper Order Coffee for our final team meeting as (technically) husband and wife. At 12 noon, we went into court together, wishing each other luck, without solicitors as this was a DIY Divorce. Possible for us because we had no shared assets, no kids, no complications. With a few words from Niall, a “yes” from me, a confirmation of paperwork and a little sprinkle of legalese from the judge, eleven minutes (and 18 months of paperwork) later, we were divorced. The relief! You can see it in our faces in the pic we took after leaving the courthouse. It was finally time to celebrate. We met Niall’s girlfriend, Katie, and my girlfriend, Anstice, for lunch at Assassination Custard, a place that feels as special and unique as my wonderful relationship with Niall. There is no other place in the world like this tiny restaurant serving tiny plates of sensational, special, love-filled food, and there is no other marriage like myself and Niall’s. Over plates of labneh and pickled veg, and tripe and chorizo, and watermelon and fermented lime, and veal with fenugreek, and a summer berry pie, we toasted to our happiness and a lifelong friendship between the four of us. It was a great day out. Here are three key things I’ve learned in the process of getting divorced: • It is quite easy to get married in Ireland but it is *not* easy to get divorced. • When you are hurt, raw, and grieving, space and time are key for healing. • Just because something ends, it doesn’t mean it’s a failure. Every part of my marriage and divorce with Niall has been a success. It has been filled with care, love, and respect. I love this man, and I love that we let each other go. I look at Niall now with his gorgeous partner, Katie, and their beautiful baby boy, Naoise, and I couldn’t feel more successful. I think about my life ahead with Anstice and I feel so grateful for it all. Thank you Nialler 🩷

I have always loved @mickaelviljanenchef cooking, now he and his ace team have the perfect room to serve their absolutely amazing food. Beautiful, precise, and incredibly delicious. At €65, lunch is a treat obviously, but when you compare it to what you can get for the same money elsewhere, it begins to look like extraordinary value. Of course, you’re looking at quite a bit more for dinner. But what you’re getting here is two-Michelin star food, that is well on the way to three-star. This is a world class restaurant.   3. Devastating news to learn that John Ward of @dooncastle_oysters has passed away. I visited his food truck @dooncastleseafoodtrailer on Saturday. A pack of German bikers, tourists and ourselves feasted on his oysters, lobster, scampi and calamari. It was a 5/5 experience that I planned to run in the Takeaway food column I write in @irishtimesmagazine . Condolences to John's family and friends, a lovely soul that has left us way too soon.   2. Mam used to always make us scallop fries when we were small. Well that's what we called them anyway. Potatoes simply cut into rounds, steamed for 10, cooled and then shallow fried til frilly and crispy and dark. Shake through salt and herbs - oregano here but could be whatever herb you like. I don't make these half as often as I should. Food memory unlocked! We used to snap them beside our ears to hear who got the crunchiest, crispiest ones! 🤩

  1. 📍Powerscourt Waterfall, Wicklow (50 mins drive from Dublin City centre) Things to do: 📌Powerscourt Waterfall: barbecue/picnic with a stunning view of the waterfall🌊 relax here for a while, take a stroll and enjoy your time away from the city centre!🍃 highly recommend carrying some games to play while you’re there!✨ 📌Enniskerry town: get yourself to the town (10-15 mins from the waterfall) for some coffee in the evening or early dinner🥗 - The Kingfishers Inn: I bought a make your own panini since they did not have a veggie option (10€) with pink lemonade (4.5€) and it was pretty average.   1. Unfortunately, due to the uncertain times and current economic crisis that we are all facing, I have decided to put Wild Sage into hibernation for most of the dark winter months ahead. It has been a pretty difficult & stressful second half of the year so far. As a mostly wholesale business, our margins are tight at the best of times and with the massive increases in ingredients prices and other fixed costs this year it isn't really sustainable for us anymore. Unfortunately, Kerry gets fierce quiet in the Winter!  Next week will be our last week supplying cafes and taking private orders. We will be closed for all of November but back open in December for cafe orders, Christmas orders and some more pop ups! We will close again for January-March at least. We are hoping to come out the other side of all this and into a brighter, more stable Spring & Summer next year.  Big thanks to all the wonderful cafes we supply and to all our customers who regularly buy our treats and support us. It really does mean the world! It's an incredibly difficult time for small business owners at the moment so please, please show your love and support to them and go grab a coffee, treat or sandwich from your local cafe, restaurant or small shop!
