  3. Delicious healthy Mexican Protein bars aka TAMALES! For the masa, start by mixing 2 cups (240g) of @masienda harina in a large bowl. Add 2 tsp of kosher salt, 1 tsp of baking powder, and 1.5 cups of chicken stock. Once thats mixed melt 70g of manteca (5.3 tbsp), let it cool, then add it to the masa and mix well. Weigh the masa ball in grams, divide by 13, and that’s the weight for each masa ball per tamal. For example, if the masa ball weighs 640g, each tamal should get 49g of masa. For the chicken, cook 2.5 lbs of chicken breast. Boil with bay leaves, salt, 3 garlic cloves, quarter onion, and pepper. Fully cook the chicken, shred it, and adjust salt to taste. Weigh out 1.8oz of cooked shredded chicken per tamal. Pour sauce to your liking per chicken serving and add it to the tamal. For the sauce, roast 10 small tomatillos (226g), 2 roma tomatoes (213g), 1 chile pueblano, 4 serranos, and 1 jalapeno. Once roasted and soft, add them to a blender with 3 garlic cloves, 1 cup of water, and salt to taste. For the tamal leaves, soak them in warm water for at least 20 minutes to rehydrate before assembling the tamales. To cook them, steam the tamales for 90min turn the heat off let them rest for 20min. Pupusa Masa Ingredients: 3 cups Maseca flour 1 cup Pan flour 4 1/2 cups hot water (more or less, masa should be very smooth) 1 tsp salt 1/3 cup Oil (for hands so that the masa doesn’t stick while forming our pupusas) Process: In a large bowl, add in your Maseca, Pan, salt, and 3 cups of water Begin kneading the masa, at least 6 minutes of strong kneading (I put two songs on and measured my time that way) If your masa is not smooth and soft add in the addition cup of water, the masa should have no lumps and should not stick to your fingers Once ready dip your fingers in oil or water and coat your hands so that the masa will not stick, grab masa, about 3-4 tbsp in size and roll into a ball, using your thumb create a dip in the middle and add your filling of choice, I used beans and cheese, pinch your pupusa shut and remove any excess masa Flatten the pupusas by slapping it between your palms until even and your desired size is reached Place your pupusas on a hot comal and cook for 4-5 minutes on each side Enjoy your yummy pupusas!

Save and follow @caitlinjesson for easy gluten free and dairy free recipes. 1 lb peeled and deveined shrimp, tails removed and minced 3 tbsp fresh ginger, peeled and minced 4 cloves garlic, minced ¼ cup chives, finely chopped 2 tsp low sodium tamari 1 tbsp arrowroot or cornstarch Pinch of black pepper 15-20 sheets of rice paper Sauce: 2 tbsp chili crisp ⅓ cup rice vinegar ⅓ cup low sodium tamari 2 cloves garlic, grated 1 tbsp coconut sugar 4 green onions, finely chopped ¼ cup cilantro, finely chopped ¼ cup avocado oil To make sauce, combine ingredients in a medium sized bowl and whisk until combined. To make dumpling filling, add shrimp, ginger, garlic, chives, soy sauce, arrowroot and pepper to a bowl and mix well. Fill a large bowl with water then generously wet a cutting board and set it next to your bowl. Line a steaming basket or a plate with parchment paper and spray with nonstick spray. Dip a piece of rice paper into your water bowl. Allow it to soak for 5-10 seconds until it begins to soften slightly. At the rice paper to your cutting board then fold all four of the edges in to form a square. Add 1 heaping tbsp of filling to the center of the rice paper square then fold all of the corners in towards the center and press them together to seal the filling in the dumpling. Transfer dumpling to steaming basket and repeat with remaining dumplings. You will need to steam in two batches. If using a steaming basket, bring 2 inches of water to a boil in a large pot then place steaming basket on top and steam for 10 minutes. If using a plate, bring 2 inches of water to a boil in a large pot. Add a heat safe bowl to the water upside down then set the plate on top of the bowl. Cover and steam for 10 minutes. Serve with dipping sauce.

Save and follow @caitlinjesson for easy gluten free and dairy free recipes. 3 lbs bone in skin on chicken thighs and/or drumsticks 1 tsp salt 2 tsp paprika 2 tsp onion powder 2 tsp garlic powder 2 tsp dried oregano 1 tsp black pepper 2-3 tbsp olive oil ½ yellow onion, thinly sliced 6-8 sprigs fresh thyme 2 cups chicken bone broth 2 tbsp arrowroot or cornstarch Cooked white rice, for serving Preheat oven to 350°F. Add chicken to roasting dish and season with salt, paprika, onion powder, garlic powder, oregano and black pepper. Drizzle with olive oil then toss well until evenly coated. Add onions and thyme then pour bone broth into your pan. Avoid pouring it directly over the chicken so that the seasonings do not come off of the chicken. Cover and bake for 1 hour 30 minutes. Remove chicken from the oven and discard the sprigs of thyme. Pour as much of the broth into a separate bowl as possible and set chicken aside. Increase oven temperature to 450°F. Add ¼ cup chicken drippings to a small bowl along with arrowroot and whisk until smooth to make a slurry. Whisk the slurry into the bowl with the rest of your chicken drippings then pour the gravy over your chicken and toss well until evenly coated. Return the chicken to the oven uncovered for 20 minutes longer, basting every 5 minutes (optional) until golden brown and gravy has thickened. Put a plate of these in front of me and they’ll be gone before halftime. All you need is pizza sauce, mozzarella, pepperoni, and puff pastry baked until golden perfection. What you’ll need : •1 sheet puff pastry, thawed @pepperidgefarm •24 pepperoni slices (about 4 per pastry) •freshly shredded mozzarella (or 6 small chunks of fresh mozzarella) •pizza sauce (I love @raoshomemade ) •1 egg, beaten (for egg wash) •pizza seasoning ( I used @mccormickspice) •Hot honey, for drizzling @mikeshothoney •Freshly grated Parmigiano Reggiano •Fresh basil leaves Comment “PIZZA” and I’ll DM you the recipe. ❤️ 1. You’re gonna start with a sheet of puff pastry. Cut it into 6 rectangles. 2. On a parchment-lined baking sheet, lay down about 4 slices of pepperoni, overlapping a little so they make a base. 3. Add some mozzarella cheese on top ( shredded or a small chunk both work) 4. Spoon a little pizza sauce over the cheese. 5. Now place one of those puff pastry rectangles right on top. Press the edges down with your fingers so it’s sealed. If you want to be fancy, you can crimp the edges with a fork. 6. Brush the tops with egg wash and sprinkle with pizza seasoning. 7. Bake at 400°F for 15–20 minutes until golden brown and puffed. 8. Flip them over so the pepperoni side is showing, drizzle with hot honey, then finish with fresh parm and basil. ENJOY
