Lay the tortillas around the edges of a sheet pan so the centers sit on the lip of the pan, then place one tortilla flat in the middle. Spread about ¾ cup sour cream across the tortillas. 2. In a skillet, cook the ground beef with taco seasoning and beef broth until browned and the liquid is absorbed. Optional: For extra flavor, add 1 diced onion and 6 cloves of minced garlic. 3. Add the beef over the sour cream, then layer shredded cheese, tostadas, shredded lettuce, and diced tomatoes. 4. Add a tortilla with the remaining 1/4 cup sour cream in the middle. Fold the tortillas over the top to fully enclose everything, then brush with melted butter. 5. Top with another baking sheet and bake at 420°F for 20 minutes. Remove the top sheet and bake for another 7 minutes until golden and crispy. Sauce 1. Add all ingredients to a bowl. 2. Whisk until smooth and fully combined. 3. Ingredients • 1 can full-fat coconut milk (13.5 oz) • 2 tbsp red curry paste • 3 garlic cloves, minced • 2 tsp fresh ginger, minced • 3 tbsp soy sauce • 1 tbsp oyster sauce • 1 tbsp peanut butter • 1 tbsp sesame oil • 2 tsp rice vinegar • Juice of 1 lime • 4 cups bok choy, chopped • 15–20 frozen dumplings (pork, chicken, or veggie) • Optional toppings: chili crisp, green onions, sesame seeds, cilantro, lime Instructions 1. Preheat oven to 400°F. 2. In a 9×13 pan, whisk together the coconut milk, curry paste, garlic, ginger, soy sauce, oyster sauce, peanut butter, sesame oil, and rice vinegar. 3. Squeeze in the lime juice. 4. Stir in the chopped bok choy. 5. Arrange the frozen dumplings on top in a single layer. 6. Cover with foil and bake for 25–30 minutes until the dumplings are cooked through. 7. Finish with chili crisp, green onions, sesame seeds, lime and cilantro if desired. Pupusas 🇸🇻 Recipe Ingredients: Curtido- 1 cabbage, thinly sliced 3 cup hot water 2-3 jalapeños 3 carrots, shredded 1/2 red onion, thinly sliced 1/2 cup vinegar 1/2 cup hot water 2 tbsp dried oregano (I really like oregano, you can use less than this) Salt to taste Process: In a very large bowl add your thinly sliced and clean cabbage, add hot water and allow to sit 5 minutes, drain this water To your drained cabbage add thinly sliced jalapeños, shredded carrots, and thinly sliced red onion Add vinegar, hot water, oregano, and salt Mix and cover with plastic wrap and allow to rest overnight (or a few hours) Salsa Ingredients: 4-5 large roma tomatoes 1/4 white onion 4 chiles de árbol 1 tbsp oregano Salt to taste 3 tbsp oil Process: Add water to a pot and add in tomatoes, onion, and chiles de árbol Boil 10 minutes Allow to cool, remove and discard skins from tomatoes Blend tomatoes along with onion, chiles, oregano, and salt Add oil to a pan and set to medium high heat Once oil is hot add in salsa and stir Allow to simmer 3-4 minutes, taste for salt and turn off heat, salsa is ready! Pupusa Masa Ingredients: 3 cups Maseca flour 1 cup Pan flour 4 1/2 cups hot water (more or less, masa should be very smooth) 1 tsp salt 1/3 cup Oil (for hands so that the masa doesn’t stick while forming our pupusas) Process: In a large bowl, add in your Maseca, Pan, salt, and 3 cups of water Begin kneading the masa, at least 6 minutes of strong kneading (I put two songs on and measured my time that way) If your masa is not smooth and soft add in the addition cup of water, the masa should have no lumps and should not stick to your fingers Once ready dip your fingers in oil or water and coat your hands so that the masa will not stick, grab masa, about 3-4 tbsp in size and roll into a ball, using your thumb create a dip in the middle and add your filling of choice, I used beans and cheese, pinch your pupusa shut and remove any excess masa Flatten the pupusas by slapping it between your palms until even and your desired size is reached Place your pupusas on a hot comal and cook for 4-5 minutes on each side Enjoy your yummy pupusas!
