  1. Carne asada meal prep that is simple, affordable, and perfect if you are learning how to track your food. You do not have to be the best cook to make something like this. The best part is you can make four full meal preps for about $20 and still get a balanced plate with protein, carbs, and plenty of flavor. For the carne asada I marinated 2 pounds of espaldilla using Chef Merito marinade and let it sit for at least one hour before cooking. For these meal preps I only used 24 oz raw weight of that meat. After cooking I divided those 24 oz into 4 equal portions and each meal prep gets one portion. I only needed 24 ounces but the carniceros always throw in a little extra lol. For the rice I used my Mexican rice recipe from the cookbook on pages 64 to 65. For the beans Cook 5 servings dry Mayocoba beans until tender. To build each meal prep 1/4th of your cooked espaldilla 100g Mexican rice 130g Mayocoba refried beans 1 jalapeño 1 green onion Note When refrying the beans you can add bean water to hydrate them. Depending on how much liquid you add they may end up slightly heavier or lighter. Pupusas 🇸🇻 Recipe Ingredients: Curtido- 1 cabbage, thinly sliced 3 cup hot water 2-3 jalapeños 3 carrots, shredded 1/2 red onion, thinly sliced 1/2 cup vinegar 1/2 cup hot water 2 tbsp dried oregano (I really like oregano, you can use less than this) Salt to taste Process: In a very large bowl add your thinly sliced and clean cabbage, add hot water and allow to sit 5 minutes, drain this water To your drained cabbage add thinly sliced jalapeños, shredded carrots, and thinly sliced red onion Add vinegar, hot water, oregano, and salt Mix and cover with plastic wrap and allow to rest overnight (or a few hours) Salsa Ingredients: 4-5 large roma tomatoes 1/4 white onion 4 chiles de árbol 1 tbsp oregano Salt to taste 3 tbsp oil Process: Add water to a pot and add in tomatoes, onion, and chiles de árbol Boil 10 minutes Allow to cool, remove and discard skins from tomatoes Blend tomatoes along with onion, chiles, oregano, and salt Add oil to a pan and set to medium high heat Once oil is hot add in salsa and stir Allow to simmer 3-4 minutes, taste for salt and turn off heat, salsa is ready! Pupusa Masa Ingredients: 3 cups Maseca flour 1 cup Pan flour 4 1/2 cups hot water (more or less, masa should be very smooth) 1 tsp salt 1/3 cup Oil (for hands so that the masa doesn’t stick while forming our pupusas) Process: In a large bowl, add in your Maseca, Pan, salt, and 3 cups of water Begin kneading the masa, at least 6 minutes of strong kneading (I put two songs on and measured my time that way) If your masa is not smooth and soft add in the addition cup of water, the masa should have no lumps and should not stick to your fingers Once ready dip your fingers in oil or water and coat your hands so that the masa will not stick, grab masa, about 3-4 tbsp in size and roll into a ball, using your thumb create a dip in the middle and add your filling of choice, I used beans and cheese, pinch your pupusa shut and remove any excess masa Flatten the pupusas by slapping it between your palms until even and your desired size is reached Place your pupusas on a hot comal and cook for 4-5 minutes on each side Enjoy your yummy pupusas!

  2. I visited the Renaissance pleasure faire in Irwindale, California and had a BLAST!! Here’s what you need to know: 💵 Bring cash! Although most, if not all vendors take card/tap, the games are cash only. Definitely recommend having at least $100-$150 to have a fun time! 🅿️ $15 to park. Just take the L and pay. I’ve seen videos of people climbing over the Rocky Mountain (iykyk) and trek it down. Park at the closest lot after paying. I like doing this because it’s quicker getting out as opposed to parking at the front. It’s about a 5 min walk. 🍖 there’s multiple places for food but there’s one area in particular where you’ll see that has most of the food vendors. Huge open area as well. ☀️ it is HOT! Idc if you don’t wear sunscreen…WEAR IT! There’s hardly any shade so be prepared. Drink lots of water as well! 👟 Wear comfortable shoes you don’t mind getting dirty. This will save you!
