  3. Hard to believe my mom has been gone for 9 years this Monday. I carry her old luggage tag with me everywhere I go. Everywhere. It's always in my backpack, and it makes me feel like she's always along for the whirlwind-y adventure that is my life. (It feels very fitting that I am posting this on a plane 🥲) It's an odd feeling, losing a parent when they were far too young to go. Though this kind of loss gets a bit easier over time, I find myself wrought with anxiety and unsettledness throughout April as the anniversary of her passing gets closer and closer. I wish this feeling on no one. I say this each year, and always feel like it's worth resharing: When my mom died in 2017, I asked myself if I died tomorrow would I feel satisfied? That answer was no. So I started travelling more, putting myself out there with creative ventures, and overall just really started to embrace that "yes, and" mentality. It has served me well, and I have my mom to thank for that. ❤️ Life can be so short, so unforgiving...So, what are you waiting for?

High Protein Chocolate Donut Holes 🍩 - only 17cals each and 2g of protein 😍! dough ingredients: -1/2 cup all purpose flour -1 scoop @ehplabs chocolate oxywhey protein powder, code ALIX -3.5 tbsp cocoa powder -1 tsp sweetener -1/2 cup 0% plain greek yogurt icing ingredients: -4 tbsp zero calorie powdered sugar -tiny splash of milk or water recipe: lightly line air fryer and preheat to 350°. throw all dough ingredients except greek yogurt into a small food processor/blender and pulse till you get a blended flour. add greek yogurt again and pulse till you get little dough balls forming. take out and roll dough into balls (mine made 26). place in air fryer and fry for 5min. let cool completely. mix icing ingredients together and coat each cooled donut hole in icing mixture. place on cooling rack to “set”. enjoy! 😋🍩 macros per donut hole: 17cals, 2g protein, 2 carbs, 0 fat #highprotein #lowcalorie #breakfast #healthysnacks #donuts #timbits

High Protein Cinnamon Bread Sticks 🍞 - whole thing is only 190cal and 12g of protein! 😍 ingredients: -1/2 cup oats -about 1/2 scoop @ehplabs vanilla ice cream protein powder, code: ALIX -1 egg white -2/3 cup water -1 tsp stevia -1 tsp baking soda -1 tbsp cinnamon recipe: preheat the oven to 390°. blend all ingredients except cinnamon. pour half the batter into a lightly lined loaf pan. sprinkle half the cinnamon on top and swirl in with a knife. pour rest of the batter on top. sprinkle rest of the cinnamon on top and swirl it in. bake for 12min then let rest before serving. enjoy! 😋 macros for whole loaf: 190cal, 12g protein, 31g carbs, 3g fat. i cut mine into 6 making it 32cal a piece. #highprotein #lowcalorie #breakfast #healthysnacks #cinnamonbread #fall

Halal Korean BBQ in Calgary 🤤 Don’t get too excited, this is not the Korean BBQ experience where you sit in front of a grill, but it is a delicious option that I think is missing from Calgary’s Halal food scene. I wish this spot was offering Halal when I was at UofC but still happy to see this as they might be the first (and only?) Korean place offering Halal certified options on the menu. Sweetest family run business in Mac Hall - in front of the 2 Tim Hortons. Not sure when they started offering this but I can’t believe no one told me earlier 😭 We tried: 🍛Halal BBQ Beef and Chicken platter ($18.25) which comes with two sides and two scoops of rice (but you can sub rice for more of the side) 🥓Halal BBQ Beef Noodle Salad Bowl ($15) Glazed potatoes, macaronies and noodles are all really good sides!! The Chinese Cultural Centre hosted a weekend of activities including this awesome Lion Dance from the Jing Wo Cultural Association and Dragon Dance from the Henan Shaolin Wushu Association.   3. Enjoyed an absolute unforgettable #WildeAboutTea experience at the @prologuedaybar - it was hands down the best Afternoon Tea I’ve ever had! I usually don’t like scones because they’re dry and just falls apart but these ones were so delicious and moist!! There were two types of scones: Classic and Apple Cheddar (my fav). I LOVE all the savoury items - they’re all so good and unique. As for the sweet items, they’re all very good and satisfied my sweet tooth but my favourite were the Mango & Matcha Tartlet and Strawberry Cheesecake Macaron. Afternoon tea is served on Saturadys and Sundays 12pm - 4pm.   2. It’s the weekend, which means it’s time for Good Things I Ate This Week (GTIATW)! 1. After a long wait, @francines.yyc (A French Bar) opened in Chinatown and it is destined to become one of Calgary’s classic restaurants. This steak frites looks like it’s an early favourite for good reason: the deepest most flavourful peppercorn sauce, perfectly cooked meat, and some of the best fries I’ve ever had. Bravo, @garrettbmartin! 2. Ham and chips (and comte) still on the menu, still a banger. 3. Surprise of the night was this excellent sweet and savoury beet salad with a healthy dose of roquefort cheese. 4. Drinks are as important as the food at Francine’s and @natewrydrinks’s martini is beyond excellent. 5. Oh, and yes, the cheese puffs. The cheese puffs. 6. Second absolutely epic dinner of the week was at the revamped @milpayyc, which is morphing into more of a creative Latin restaurant than a standard Mexican joint. Chef Colby Tio is killing it — this selection of ceviche, crudo, and a cooked hamachi collar was mind-blowing. The collar is a feature since the cut is scarce (fish only have one!) but Colby’s preparation was flawless and the sauce it’s served with is worthy of a plate-lick. 7. This duck empanada? So flavourful, a little spicy, genius. 8. Drinks at Milpa remain fun and delicious. 9. This duck dish showcases the direction Milpa is heading in. Again, the layers of flavour in the sauce is the thing here, but meat was cooked perfectly. 10. I’m not an animal, so I also had some salad. This play on a Caesar is great. 11. It’s not all fancy in my world. A stop at @lilempireburger is often exactly what the day requires. 12. @sxfcoffee is playing with a high-level version of a vanilla latte as their feature drink and it’s perfect. 13. If you love coffee, do yourself a favour and check out the tasting flight at @paradigm_spark. 14. And I finally found a night to melt down my holiday cheese ends into a fondue. Best new year’s tradition. 15. Which went beautifully with this @maisonjosephdrouhin Chard that was a gift from my friends at @pacific_canada. #foodwriter #winewriter #yyc #yycfoodie #yyceats

  3. It’s the weekend, which means it’s time for Good Things I Ate This Week (GTIATW)! 1. Was it only a week ago I ate at the preview night of the fabulous new @pennycrownyyc? Yes — but the restaurant is now fully open, so you can go get @chefdavidleeder gorgeous burger that many are calling one of Calgary’s best (myself included). 2. And the baked scallops. Two words: pepperoni butter 3. Also highly recommend this luscious take on steak frites. 4. And the fattest, juiciest mussels. 5. Have you ever fallen in love with a Riesling? This beauty from @kuntzsybille went perfectly with curry sausages from @crossroadsmarketyyc. 6. It was my honour to act as a judge at saltandbrickyyc’s inaugural Chive Cup, a very goofy premise that involved some very serious chefs having a lot of fun. This was the winning dish — a sweetbread terrine with chive souffle —from @jaypsdub.chef. 7. I was so busy judging I forgot to take many photos, but I loved @rupertgarcia’s seafood medley, despite it being a bit light on the chives, haha. 8. @nilscschneider also serves a version of this Coquille Saint-Jacques at @lecharmebistro and I can confirm it is delicious. 9. Everyone also loved this taste of @chef.francis.martinez’s anticuchos. (And my apologies to the other chefs — I thought I took more photos!   2. I call this my healthy ☁️DESSERT FLUFF☁️ because it tastes like a fluffy greek yogurt cheesecake mousse. NO BAKING REQUIRED, no sugar, gluten, or weird additives. I made this one up, and I now have multiple variations. Today I’m going to share the basic vanilla recipe. By the way, my house guests loved this! It is the perfect summer recipe and pairs so well with fresh berries, or even some dark chocolate shavings on top. #glutenfreesugarfree #healthydessert I’ve used this as a fruit dip, as a cake topping and simply just a dessert on its own. I am working on perfecting my DAIRY-FREE variety so don’t you worry! I know most expert bakers would suggest whipping the cream separately, but I wanted to try an all in one recipe using just one mixing bowl. The results were PERFECT and it’s a very simple clean up too. Although this doesn’t last long, it does keep well in the fridge for a few days. You may notice the texture changes a little but sometimes I find it tastes even better the next day. So do you do you make it? All you need to do is gather equal parts of: -Full Fat Plain Greek Yogurt -Whipping Cream -Cream Cheese, softened * *if you prefer a thick texture, or you are a mega cheesecake fan, you can use more cream cheese. For example: 1.5 cups cream cheese, 1 cup greek yogurt, 1 cup whipping cream I usually start with a brick of cream cheese and use that as my initial measurement and measure an equal part of both yogurt and whipping cream. Using an electric mixer, beat the cream cheese until it is creamy. Add the greek yogurt and beat the mixture together for about 30 seconds. Slowly add the whipping cream and continue to mix everything until the texture changes from smooth to fluffy. This took about two minutes with my standing mixer. The last two ingredients are 1 tsp of vanilla (or more) and your sweetener of choice. I suggest powdered sweeteners instead of granulated (monk fruit powder or allulose). Start with ¼ cup and increase as needed to taste. Store in the fridge!   3. 🔥Are you looking for a different way to use ground beef? TRY THIS CRISPY BEEF! This technique involves extending the cooking process for a few minutes and getting that nice crispy texture on the exterior (basically the same idea as making crispy bacon). I know several people who struggle to consume beef unless it’s well-done. Personally, I don’t like to overcook my beef on a regular basis, but sometimes it’s nice to have a change. Use a ground beef masher for best results. If you haven’t used one of these before, I think you may agree that the $10 investment is worth it! I’ve tried mini kitchen gadgets before and this is definitely in my top 10. It ensures the beef is evenly cooked and separates it with minimal effort. There are a lot of ways that you can use this beef and I will share a recipe this week to give you some inspiration. Once it is to the crisp texture of your liking, you can add any seasoning or sauce that you desire. A simple sprinkle of salt and pepper is perfect, or you can make it a bit saucy. For maximum nutritional benefits you can use grass-fed beef like I did here.
