Keto Cheeseburger Ramen 🍜 . 🔹Cheese broth 2 cups chicken stock 1 cup heavy cream 1 tbsp soy sauce 1 cup cheddar cheese 1 tbsp spicy togarashi seasoning Salt and pepper 🔹Spicy beef and bok choy 2 tbsp avocado oil 1 onion, sliced 2 lbs lean ground beef 1 tbsp spicy togarashi seasoning 1 cup bok choy, chopped 2 packages @nupasta spaghetti, rinsed and dried 4 soft boiled eggs 1 bunch scallions, sliced Salt and pepper . 🔹For the Cheese broth 1) in a pot pot add chicken stock, heavy cream, and soy sauce and bring to a boil. 2) Remove mixture from the heat, slowly add cheddar cheese. 3) Season cheese broth with togarashi and salt and pepper. . For the Spicy Beef & Bok choy 1) In a deep pan add avocado oil and onions. Allow to cook over medium heat. 2) Add ground beef and cook until well browned 3) Add bok choy and cook until softening 4) Season with togarashi, salt and pepper 5) Incorporate cheese sauce into the ground beef and set aside. .   1. Happy Birthday Me, To suggest this year has been a struggle would be a major understatement. I had an undiagnosed sickness for the majority of last year. I struggled with mental focus, mobility, and proper sleep. I eventually ended up in the ICU and then the hospital for 3 weeks. I was told i was suffering from congestive heart failure, kidney failure, and had several heart attacks that went undetected. While I was in the hospital I lost my best friend and main support system, me being sick was apparently too stressful for her. She never once came to visit and then eventually stopped returning my calls. To this day I haven't heard from her since. I’ve kept this private till now as frankly the situation is humiliating. Currently I’m operating at 4% kidney function. I’m at the hospital for hemodialysis every other night. My blood hemoglobin sits at 70 (g/l), it should be 140-170. I get half the oxygen per breath than the average person. My nutrition is heavily restricted (low protein, low sodium, low potassium, low phosphorus) I can’t drink, take drugs or any supplements, or even travel. I have a tube hanging out of my chest that goes directly to my heart that cannot get wet. Despite all this I hit the gym 6 days a week, no complaints. I’m back working full time with clients and writing another E-book. It’s unlikely I’ll ever travel again, enter a contest, or ever be in a situation where I even have my shirt off. Yet, I’m still working on my physique, strength, business, and mind to be the best I can. What’s your excuse?

  2. I've never been someone who asks for help, so I find this very hard to do. As you know I have Stage 5 Kidney disease. This is a terminal disease and will never get better. Even with Dialysis the average life span is 5 years. I've been accepted into the transplant program at The Health Science Center. I am now actively looking for a kidney donnor. Specifically a donnor with O blood type. We all have two kidneys, and can live perfectly normal with just one. I've never asked someone for an organ before, so bare with me.... If you or anyone you know with type O Blood have an extra Kidney you don't need, I'd be super grateful.   3. 2011 - I often get asked why I don't compete anymore and what led me to abruptly stop all together. I was winning shows, making money, traveling all over, appearing in magazines, and had a killer sponsorship deal. Then one night 10 years ago, I woke up with what I can only describe as a burning pain in my left arm. By morning, the pain had subsided but the long head of my left tricep was completely limp. I couldn't flex or activate it any which way. I Immediately went to the sports doctor to check for a muscle tear, rupture, or something. Nothing.... from there I went to nerve clinics, chiro, massage, athletic therapists, surgeons, literally anybody that would take a look. The best answer was maybe nerve entrapment, somewhere in my shoulder as one is riddled with arthritis and bone spurs. The tricep never came back, and remains paralyzed to this day. Going out on stage without a complete package just wasn't a option for me. Knowing I wouldn't be as good as I once was a huge hit to the ego. But I probably needed some humbling..... I still love shows and have just as much fun helping others get on that stage. Kudos to anyone who actually read this. 🤗

  2. Today is day 1. My husband was away for work and when he returned we both knew it would derail my schedule. Daily workouts and clean eating all out the window. I expected a quick , less-than-a-week turnaround but that turned into a month. I'm not one for all the motivational stuff but saw one today that read: Consistency does not mean never making mistakes but rather, never giving up. So here I am, a month of little activity, tossing anything I wanted down the gullet , bloated AF , sluggish and fatter. BUT ready to turn things around..again! Can't believe the double chin is back 🤦🏻‍♀️ Here we go! Also, my husband grew facial hair for the first time in our 16 year relationship. He hates it and threatens to shave it off daily but I think he looks handsome. Please help me convince him to keep it!

  3. Been a while since I've done a #transformationtuesdsy . Motivation to take down that top bun and slapping on some rouge is lacking. Also, I have way less photo sessions these days. 😂 I compared a photo from this weekend to one in September. I look bigger in the most recent pic but it's not the case. I've done a lot of heavy lifting and it really cut some inches off. It''s all about those angles! I'll never obsess about something as meaningless as a bad angle...why cause I will never go back to where I was a couple years ago. How I feel mentally and physically will always matter more than comparing myself in photos. It's Christmas time. I'll be indulging and getting back on track in the new year. It's how this lifestyle is sustainable to me.

  2. When I started my #ketojourney in April 2017 I made myself a rewards chart. A 50lbs weight loss would be a tattoo because losing that much weight seemed like an impossible goal. As the weight started to come off I moved the tattoo to a 100lbs reward. In December of that year I reached my goal. That same month I found out I was pregnant with Audrey so a tattoo had to wait. Pregnancy and nursing all behind me I finally got to reward myself. Not only is this a marker of my amazing kids (or a helpful cheat sheet when I forget their names) but it’s also a reminder of what I HAVE accomplished! I often focus on how far I have left to go to accomplish my goals but on my arm it will forever be a reminder that I can do “it”....whatever IT may be!   3. I was so lucky to get invited to @ketokait_26 pizza party last night featuring the new @unbunfoods crust from @pizzapizzaltd . I was so pleasantly surprised! It was actually really good. No eggy taste with legit pizza topping. I don’t know why but pizza from a store just always taste better then homemade. Transformation Tuesday Hey-Hey :-) The first pic was taken Jan 15, 2019 - it has been over 2 years on this journey (to the pic of me in jeans today) and I have to say, from the girl who has struggled with my weight and out of control eating since a teen, I started Keto on a hope and a prayer. In many ways I didn’t even care if it worked...I just needed to do ‘something’. As I began to immerse myself in research I soon became convicted that this was the best way to eat (for me). It became more than just weight loss. It became about health too and then SO much more snow balled from there. Sometimes it is just putting one little foot in front of the other, trusting the process and letting yourself be surprised as the path unfolds. That first pic was taken with 0 followers on this keto dedicated account and has now grown to over 3,000 🤯. I continue to be inspired by the fellow keto’ers I follow, and by the friends I have made along the way. All of you keep me going. Let me say this, these last few months have been tough. Quarantine has finally gotten to me and with a new job and 4 kids home there are days where I feel like I am loosing it and going back to my old ways. I will forever be a recovering food addict and some seasons harder than others, but continue to be grateful for the many I see who are resilient. There is no real arrival point either, sorry to disappoint you. Weight loss and maintenance are a forever journey.   3. I’m learning that the mindset for maintenance is not much different than loosing weight. I’ve heard that over and over again, but never given myself the chance to even get close to maintenance, until now. I have been maintaining my weight (with a ketogenic/low carb lifestyle) for 7 months now...which is actually shocking to me. ⁣It has been 18 months of eating a ketogenic diet and honestly, I love it. Even still. So yes, it is 100% maintainable if you are willing to unlearn and relearn. ⁣ ⁣ Forge a new path. ⁣ ⁣ ⁣ I’m training the quit outta me. ⁣ ⁣ Is it easy? No. ⁣ ⁣ Is it daily choices? Because I didn’t have egg white protein powder, I tried powdered egg whites- I’m not sure if they’re the same thing. Anyone know? I watched her YouTube video which and came up with these. I used 500g of room temperature egg whites, 50g of powdered egg whites, and a pinch of salt with the powdered whites. Baked at 325’F for 30 min, then turned the oven off and left them in another 15.   1. Layered chocolate almond fat bombs! . Super easy and great for the sweet tooth between meals. Makes 24 bombs. (each serving = Fat 14.7 g, Net carbs 0.7 g, Protein 2 g) . Ingredients: 1 cup of almond butter 1 cup of coconut oil 1 tbsp cocoa powder 1 tbsp swerve sweetener 2 tbsp sugar free chocolate chips. Instructions: 1. Melt 1 cup of coconut oil for 40 seconds in the microwave. 2. Add and stir in 1 cup of almond butter, swerve, and cocoa until smooth. 3. Poor half of the mixture into moulds, only filling them half way. 4. Chill moulds in freezer for 10 minutes. 5. Add chocolate chips to remaining mixture, microwave 30 seconds and stir. 6. Top up moulds, and chill until fully solid.
