I was over the moon amazed at how fantastic it turned out. I will definitely be making this again. . Here is how we made this incredible surf & turf! . -2 lobster tails -2 filet mignons - lemon butter - spices of your choice I used smoked paprika, powdered garlic, lemon, butter and some cayenne pepper. Mix it all together. . How to make the lobster tails. . First you cut the lobster tail by using sharp scissors, cut all the way down to the last shell of the lobster. See pics. - Then retrieve the meat out of the lobster gently still in tact to the last shell and place onto the top of the whole shell of the lobster. -Next in a bowl add 1/4 cup of melted butter, add fresh or powdered garlic and lemon juice of one lemon. Add spices of your choice I used a dash of smoked paprika & cayenne pepper. Mix together very well. . Add this mix onto the meat of the lobster basting it all over. . Here is a simple method of knowing how to broil your lobsters. if you have a 7 ounce lobster tail you broil on high for 7 minutes. If it’s a 5 ounce tail then broil on high for 5 minutes It works every single time, and it’s cooked perfectly! . Our fillet mignon were spectacularly cooked as well, my hubby made those. . This was a super amazing meal with a lovely bottle of J-lohr red wine. It just doesn’t get any better than this! . . I’ve been looking at this image a lot over the past few days and to be perfectly honest, it terrifies me to think of that tumor ever growing back. . One year ago we found out that Parker’s brain tumor was gone. . He had been off chemo for 8 months and the last little bit of enhancement from the summer scan had completely resolved (with a keto diet being the only continued intervention). . Never in my wildest dreams did I think that we’d hear those 3 magic letters NED (no-evidence-of-disease). . Over the past year, Parker has continued to thrive and I’m struggling to remain patient until his next scan in April 2020 (it will be 10 months since his last MRI). . This past year I’ve seen too many children diagnosed with cancer and too many families bury their beautiful warriors. It’s tragic and so grossly unfair. . That’s why I refuse to get caught up in the hustle and bustle and all the “shoulds” of the holiday season. In the big scheme of things, none of that stuff really matters. . Instead I’m choosing to focus on honoring traditions that nurture my soul, and letting go of the rest. . I’m choosing to focus on quality time with my children. . Are you a smashed avo on toast lover 🥑🍞? ⠀ It is definitely pretty easy to go overboard with avocado especially because they are so delicious! ⠀ Even though avos are super healthy since they are loaded with healthy monounsaturated fats, fibre, vitamin C and folate (just to name a few), the recommended ‘serving size’ is ~30-50g or 1/4 of a medium avocado. Of course the portion size you choose is up to you 😉 ⠀ My trick is to mix avocado with either green peas, edamame or ricotta/cottage cheese (regular or reduced fat), it helps reduce the calorie load without reducing the volume! I usually consume other sources of healthy fats through the day e.g nuts, seeds, nut butter and extra virgin olive oil so this trick helps me keep my portion size in check and keeps room for other fat sources in my day (variety is key)! ⠀ Really, it’s a perfectly balanced mix of healthy fat, protein and fibre that will keep you feeling full and satisfied! Perfect for breakfast, lunch or dinner or maybe even a snack! Swipe right to see how I enjoy mine ⠀ This trick also helps me out because I follow a modified FODMAP diet and struggle to tolerate a large portion of avocado (I’m intolerant to sorbitol). This trick allows me to enjoy avocado in the portion size that works for me. Thanks to @ketodashapril, I learned that you can keto-fy my favorite childhood treat! — Ingredients — For the vanilla shortcake: -1 packet JELL-O SF Vanilla Pudding -1/4 cup almond flour -1/2 stick softened unsalted butter For the strawberry shortcake: -1 packet JELL-O SF Strawberry flavored gelatin -1/4 cup almond flour -1/2 stick softened unsalted butter For the ice cream: -Three containers of @craftbelly_delights Vanilla Vanilla ice cream (to make three bars) -3 serving silicone ice cream bar mold (purchased from Amazon) — Directions — 1.) Preheat oven at 350F 2.) In small mixing bowls, separately mix together the vanilla and strawberry ingredients 3.) On a lined baking sheet, transfer the vanilla mixture to one side and the strawberry to the other, flattening with a dowel or with hands 4.) Bake for 7 mins 5.) Allow to cool for 30 mins at room temp. Transfer baking sheet to fridge and cool for another 30 mins 6.) Crumble the vanilla and strawberry shortcakes together by pulsing gently in a food processor or in a ziplock bag with a dowel 7.) Transfer softened vanilla ice cream to ice cream bar molds and allow to harden for a few hours 8.) Dip vanilla bars into strawberry/vanilla shortcake mixture until well coated.   3. “If you are what you eat, then I only want to eat the good stuff.” - Remy 🐭 Keto Honey Butter Brick Toast with Ice Cream 🍯🧈🍞🍨 TBH, I was really trying to make a bear but inadvertently channeled Remy from Ratatouille in the plating 😂🐀 . The ears are made from @ketonaturals Buttery Coconut Cookies and eyes and nose are @choczero morsels (note to self — turn the ones for the eyes inside out next time so they’re less creepy looking 🤦‍♀️). To make the brick toast, I used 4 slices of cloud bread (made during my eggfast!). The bottom slice is left alone and for the top three slices, I cut out a square from the center of each and then cubed those squares. I mixed together 1/4 cup melted butter with 1/4 cup SF honey, a pinch of salt and 1/4 tsp of vanilla extract, coated all sides of the bread liberally and toasted them in my air fryer at 375F until golden. I assembled the slices together, topped with ice cream and drizzled @choczero Caramel Syrup. @craftbelly_delights Vanilla Vanilla has been my favorite ice cream lately for its versatility. I made black sesame (with 3 tsp black sesame powder), blue matcha (with 2 tsp @arteaolife blue matcha powder), and lavender (with homemade infused lavender cream)!
