'Resilience' is a strange word, because it implies bouncing back from your hardships and struggles but it can often unintentionally dismiss the struggle or pain that people have been through. This week @ketomanagement will be cycling 244.6 miles in two days from Petersfield to Manchester, before running in the @manchestermarathon on the third day, all to raise vital funds and awareness for Epilepsy Society and our mission to #StampOutSeizures. Ryan’s three day challenge will be a walk in the park compared to what he has experienced over the last 13 years. It all started when he woke on a warm night in July 2011 to a surreal and terrifying scene, scared for his life and lying in an ambulance with his wife and paramedics watching over. The severe seizure Ryan suffered in his sleep would lead to a diagnosis of epilepsy – a brain condition which he knew nothing about at the time – and nearly a decade of struggle with severe depression. Ryan began looking into brain surgery in 2020 after medication failed to control his symptoms. But the positive effects of healthy lifestyle choices were revelatory, and he discovered a fresh purpose after taking up running and a ketogenic diet with his family’s support. Ryan found an outlet for his emotions and the sense of pride he felt after completing his first 5k run proved anything was possible. It wasn’t long before he was competing in bigger challenges, eventually completing six marathons and three ultra-marathons. Remarkably, during one marathon, Ryan suffered a temporal lobe seizure at mile 14, but he powered through to finish the challenge, coming close to achieving a personal best time of under four hours. Ryan’s next major ‘bucket list’ event is the fast, flat and friendly Manchester Marathon, which he will attempt on behalf of Epilepsy Society. Over the years he has already raised more than £6,000 for our cause, and is determined to add more from his next fundraising mission. He said: “I want to achieve a time of 3 hours 45 minutes. Method Mix gelatine and water, let it bloom for a few minutes and microwave until it is melted. Add sweetener, vanilla extract and gelatine to the yoghurt. Vegan keto lemon drizzle cake Recipe Ingredients 30g milled golden linseed 100ml lemon juice 100g almond flour 40g allulose (adjust to taste) 10g psyllium husk 50g flora proactive (margarine) 1tbsp sunflower oil 2 tsp lemon extract 1 tsp baking powder 1 tsp baking soda +extra lemon juice for drizzling Glazing 35g allulose+2tsp lemon juice Method Mix lemon juice with milled linseed and let it sit for 15minutes to create vegan “eggs”. Mix dry ingredients. Melt margarine and add to the dry ingredients. Add oil, lemon extract and linseed mixture. Mix well and transfer it into a baking paper lined loaf tin. Bake on 180C for 30-35 minutes or until the inserted toothpick comes out clean. Squeeze the juice of half of a lemon over the cake. Let it cool down. For the glazing mix the powdered allulose with lemon juice and drizzle over the cake. This is a mild flavoured cake, adjust the amount of lemon and allulose to taste.   3. Keto strawberries and cream mousse, the perfect summer dessert. Everyone loves strawberries and cream. If not, why not? Are you a monster? 😀 Anyway, I bought a bunch of fancy looking silicone moulds from aliexpress dirt cheap, so I am in the mousse fever now. Excuse the colour of the post brexit great British strawberries. All saturation enhancement in the world couldn't make it look like sunripened proper strawberries 😅 Recipe (15pcs) 150 ml double cream 20g powdered erythritol (adjust to taste) Vanilla paste /extract 3g gelatine +tbsp water 15 strawberries Used "Russian tale" shape silicone moulds Method Bloom gelatine in water for few minutes, microwave until it is melted. Whip up the cream with erythritol and vanilla until you can see the marks of the whisk, but does not form peaks. Add gelatine and whisk in. Fill the moulds to about half to 2/3 way up and push in the strawberries. Spoon away any excess cream to make the bottoms flat. Freeze it solid, so you can push them out of the silicone mould. Thaw it in the fridge before eating. They can be kept frozen for a few weeks.   2. Issa transformation Tuesday, but probably not the kind everyone else is doing. On the left I was at my lowest weight since starting this journey, on strict keto, leading a reasonably active life and doing Thai boxing twice(ish) a week and wearing fabulous coats obv. Since then we've had a global pandemic, some truly horrible stressful situations and a total lack of exercise. All pretty good reasons to gain weight, but hand on heart, I never fell off the wagon with my eating. I was angry, I felt like I didn't deserve to pile on nearly 2 stone. I won't lie, it's been really hard to essentially float backwards despite my arms and legs paddling like mad to swim forwards. Constantly researching what to do next, how to get things moving again, meticulous meal planning, pre-loading my calories into MyFitnessPal before every meal, thinking about it before I go to bed at night every night. I thought this side by side would really upset me, but you know what? It hasn't. I don't look that different, I will get back there eventually when my metabolism wakes tf up. It's okay. Aside from gaining some weight I've also gained: ✨An understanding of reverse dieting and metabolic adaptation ✨The ability to learn moderation with trigger foods ✨A new wardrobe (whoops) ✨A new found love for exercise for how good it makes me feel not because I should ✨Less of a reliance on the scale to tell me how I'm doing - I won't lose weight while reverse dieting, so why keep looking at it? It's still a struggle, I'm still trying to find my way with these new found calories and foods without binging.   3. I binged this weekend. There, I said it. And it was a bad one too. I figured at least if I can stop it being some huge secret then maybe, just maybe, it won't kick off the cycle that it normally does. It started off with a poor decision when presented with a trigger food, and ended with something that I felt like I had absolutely no control over. Like my body had a mind of its own and I was just some helpless bystander watching it all unfold, dealing with the physical discomfort that ensued. Before I knew it I had sloped off to the shop to specifically buy binge foods, did the deed and disposed of all the evidence, told myself that was it and that there would be no more...and then proceeded to do it again, and again, and again. I still don't know why it happened, which is probably the worst bit. It seems so unnecessary. I dread to think the damage that has been done calorically or to my poor digestive system. It's very hard not to indulge in extreme damage control strategies now. Truly, the only thing keeping me from swinging that pendulum right in the other direction is the fact that I know it will lead to another binge. All I can do now is go on as normal and try not to dwell too much. But honestly I am upset about it, not feeling very clever at all.   3. Tonight's #lowcarb #ketogenic dinner was so good, not bad for our first attempt! Turkey filets stuffed and topped with cream cheese, natural yoghurt, spinach, smoked cheese, garlic and paprika! The sides weren't as impressive I'm afraid! It's food like this which makes this a sustainable way of eating, rather than a #diet. Yes the #protein is "high", but this is my one and only "meal", so I need to make sure I'm hitting that Macro, especially after my #kettlebell #HIIT #cardio session this morning. Sometimes - Doctors get it wrong! ‼️ Back in 2014 I had some pre cancer removed from my cervix (**side note - LADIES- GO GET YOUR SMEARS**) Due to this I was told that I may have to have a stitch to help support mine & keep baby safe. I had to have an additional scan after my routine 20 week to see if a stitch was needed. I was told different things by separate Drs - 1.) You don’t have much cervix left - we can’t stitch, 2.) Your cervix is open your baby is in trouble 😳 I was admitted to hospital, given progesterone & then sent home 6 days later being told I needed strict bed rest & if I could hold on for a few more weeks then our baby would be considered ‘viable’ ( a doctor actually said that! 😥) None of this sounded right to me so I got a 2nd opinion & it was all WRONG! Nothing wrong with me or baby - in fact, I’m cast iron!!! Mamas - you know your bodies, you already know your baby- if it doesn’t sound right get a second opinion! Hopefully now I can continue to enjoy the rest of my pregnancy. You can use a blender, food processor or a rolling pin and a bag to finely crush your pork rinds -chicken breast will be needed. Make sure to cut them about an inch wide. -you will need eggs as well. Place into a bowl and Beat the egg. You are going to need to cover your chicken in the egg wash so let that soak up for a bit. Once that’s done go ahead and transfer your chicken into the pork rind crumbs and make sure to evenly coat them 😍 bake at 400 degrees for about 30-45 minutes and enjoy with dressing of your choice 🤩 🍟 keto fry recipe 🤩 - 1/2 a cup of coconut flower - 3 teaspoons of Xanthan gum -1/4 a cup of Parmesan cheese - hot water ( I added in water until my mixture was completely smooth) Once all your ingredients are combined grab your dough like mixture and place it into a piece of cling wrap.
