You were the light of the city, you couldn’t walk down a street without bringing a smile to at least 100 people’s faces.   1. 🍆AUBERGINE PEANUT BUTTER CURRY🍆 Veggie curry perfect for quick mid week dish. I found this in the Waitrose and Partners Food magazine as it was recommended. Loved the flavours and we used a red curry paste made from the Gordon Ramsay, Great Escape Southeast Asia cook book. Serves 4 Ingredients 1 1/2 tbsp sunflower oil 2 aubergines cut into 2cm chunks 1 onion (I used 3 small shallots) 1/2 coriander, stalks finely chopped and leaves torn 4 garlic cloves 60g Thai red curry paste 1 tsp light brown soft sugar 4 tbsp crunchy butter 400ml can coconut milk 120g beans 1 lime, juice plus wedges 240g jasmine rice -heat oil and cook aubergines until soft golden and tender. Around 10-12 minutes. At the same time chop your shallots/ onion. Transfer aubergines to plate and add onion with salt to pan and cook for 5 mins. Add coriander stalks, garlic and curry paste and cook for 2 mins -stir through sugar, peanut butter, coconut milk and 200ml water. -start cooking your rice -add aubergine and dinner for 5 mins. Stir green beans and simmer for 3-5 mins depending on how crunchy you like them. -add a few drops of fish oil (unless vegetarian) -take off the heat and stir through lime juice, season. -serve with your rice, lime wedges and scatter coriander leaves. -enjoy 💜

SLOW ROASTED BASIL & TOMATO TAGLIATELLE WITH SCOLLOPS & PRAWNS Finally getting the hang of these reels... this dish was inspired by @veganhealthybowls (it was vegan but I made is pescatarian) Served 3 2 shallots chopped finely 3 tsp garlic paste 1 tin good quality chopped tomatoes or Passata Handful of basil leave chopped roughly 250g moonblush tomatoes/ cherry tomatoes (add Sundried for extra favour) 15 scollops 2 packs of prawns Recipe: -Slice in half in baking tray with flesh side up with olive oil, salt and pepper. -Slow roast 150 for 35-40 mins, you want them to cook slowly and roast not turn into a sauce! -Hot pan with oil, add your shallots and caramelise them, then add in garlic -Fry your scollops on high heat for about 50 seconds each side, set aside -Fry prawns in same pan and set aside -Add in tinned tomato’s and cooked pasta -Add in scollops and prawns to pasta and tomato -Dash your basil on and serve -Enjoy 💜

On my last day of being 39 I booked a holiday to Portugal which meant I was leaving in 2 days time, without anything organised, on my own, with no time to think and as it turned out…I had the best time. Having no time to think surprisingly works quite well for me! I packed loads in to my week, met some awesome people, seen some cool sights and somehow burnt my nose on the last day which has thankfully healed!
