Place the bulk of the leg on your knee and apply some pressure levering the lower leg down to the floor. Using the weight of the animal this opens up the joint slightly and makes your cuts more accurate. Pheasant/Partridge goujons are a go-to during the shooting season so here are 7 steps to achieve #GoujonGreatness 👨‍🍳 1️⃣ Breast - this can work with fresh or frozen breasts ✅ 2️⃣ Slice - into strips of roughly equal thickness, think chicken selects from maccies (who doesn’t like a chicken select?!) 🍗 3️⃣ Buttermilk - very important step! The acidity of buttermilk helps to break down tough muscle fibres whilst retaining moisture, this helps to tenderise the strips (shout out to @libbyround5 for teaching me this years ago 👊) - leave the breast for at least a couple of hours, preferably overnight if you can 🕰️ 4️⃣ Spices - admittedly I tend to freestyle it but find that adding salt, pepper, smoked paprika and garlic powder is the one👌🏻 try roughly for about 100g of flour per 4 breasts. 🌶️ 5️⃣ Toss - take the strips out the buttermilk and shake off excess, toss them in the spiced flour. ** For best results, once coated put them back in the fridge for half an hour or so, this helps the coating to properly stick and it won’t come off in the pan** 🍳 6️⃣ Fry - get those rascals in the pan!!! Important that the oil is really hot and fry for about 4 mins each side. 🔥 7️⃣ Season - channel your inner salt bae 🤌🏻 Then - Bon Appetit! I think this is the prettiest pike I’ve caught!!🤩 I’ve been pretty ill and rundown lately so I went for a chilled out sit down by the waters edge and got the deadbaits out to recharge the body battery!🐟🪫🔋 The colours from head to tail were absolutely stunning, with the prettiest gold and red in its scales.   3. A fantastic perch session last month with lure-fishing buddy @iamthomhunt_fishing 🎣 We spent two days on a large, challenging reservoir. Day one brought plenty of bites, but mostly small perch under 1lb—and the bigguns were nowhere to be seen. After a tactical chat over a pint that evening, we came up with a new plan for day two… and it paid off!   3. After a few days @mikerobinsonchef & @captain_joepk were finally getting the hang of the pole spears in the Bahamas and putting some fish in the cooler. These shallow reefs were unlike anything I’ve ever seen before with meadows of soft fan corals dancing in the sunlight. TBT I mentioned in my previous post that I’ve been lucky enough to have had great feedback from anglers who have used my rig contributions over many years, if you swipe left you’ll see a recent update from Gary Kimbell who has used the Multi-Rig since the early 2000’s and has managed to catch a staggering tally of big carp, most of which has been while using it in one form or another. Gary prefers to stay under the radar and not publicise his success’s, but his tally is so impressive he at least deserves a mention in my opinion, especially given he is not a professional or full time angler. The lead photo is a sunshine common I managed to catch many suns past that was also caught using my multi-rig and a forever reliable Mainline bait that tempted such a gorgeous creature to pick it up in the first place.   2. The best highlight of 2023 was fishing with friends like Jules and on the occasion this fish was caught with friends Keith Wheeler, Owen Ridgewell and Colin Walford. Also Chris Lowe who couldn’t make the trip to Little Farriers this time (we’ll be making up for that!) and here’s to many more in the future. Over the moon with that one that succumbed to a 18mm Mainline Hybrid bottom bait mounted on a hair rigged Multi Rig with the loop position opposite the hookpoint similar to a knotless knot presentation amongst a spread of Cell and Hybrid 10mm’s. #mainlinebaitsofficial #carpfishing
