  1. RED CHILLI JAM & GOAT’S CHEESE TART Aromatic, delicious and full of summer flavours! I was kindly #gifted this red pepper & chilli jam made by @labouroflovepreserves I love creativity and this flavour wooed my intrigue. The jam came in a beautifully decorated jar and its unique sweet and tangy taste had us pairing it will various things. It goes great with cheeses and barbecue! Not too spicy, yet full of flavour! 🌶 Save this recipe as it will take you on a taste journey 🤓 Ingredients: * 320g puff pastry roll * 200g cherry tomatoes * 1 Tbsp olive oil * 1 Tbsp balsamic vinegar * 1/3 jar @labouroflovepreserves red pepper and chilli jam * 1 medium red onion * 125g soft goat's cheese * 160g asparagus * 50g grated Parmesan / pecorino cheese * black pepper Instructions: Preheat the oven to 200C.
Add cherry tomatoes to oven-safe dish. Add balsamic vinegar and olive oil and roast for 15 minutes. Set aside.
Roll out the pastry and place it on the baking tray with baking parchment.
Using a sharp knife, score the pastry about 2cm along the edge.
Using fork, prick pastry several times.
Spread the red pepper & chilli jam over the pastry avoiding the edges. Evenly place thinly sliced red onions over the top. Scatter parmesan / pecorino cheese over. 
Add asparagus and roasted cherry tomatoes.
Crumble goat's cheese then add black pepper.
Brush the edges of the tart with the milk.
Bake on the top shelf of the oven at 180C for 25 minutes.
Serve immediately.   2. There are some absolutely precious new arrivals at Port Lympne! You may have heard that Namuu, the park’s female Pallas’ cat, has given birth to a litter of beautiful kittens! Born on the 9th April, the kittens have recently started venturing out of their den. I headed to the park today and was lucky enough to catch a few glimpses of them through the windows of the Pallas’ cat house. Even though it’s still early days for the kittens, they all seem to be doing well as far as I know and are growing fast! Even after having been a regular visitor to the park for over a decade, this is the first litter of Pallas’ cat kittens I’ve ever personally seen and photographed, and I look forward to seeing them grow and develop over time! To say it was a real treat to see these babies would be an understatement.   3. Introducing Django, the clouded leopard! I was really hoping I’d get to see this gorgeous boy on Saturday, and much to my delight he decided to pop his head out of his nest box towards the end of the day — looking extremely chilled-out while doing so! Django arrived at the Big Cat Sanctuary from Pairi Daiza in Belgium last year. It is hoped that at some point in the future, he and female clouded leopard Bua (who actually arrived at the Sanctuary from Howletts last year), will welcome cubs as part of the conservation breeding programme for the species, which is classed as Vulnerable. For now though, the two are living next-door to each other.   2. Happy Sunday luvs !! 😘 very strangely wasn’t fancying a Sunday roast today so made some pork belly slices with creamy Parmesan mash, kale and parsley and garlic sauce instead ! I glazed the slices with Worcestershire sauce, brown sugar, balsamic vinegar, lemon juice and a dash of olive oil and roasted them in the oven for 30 mins.   3. 📍JURKISH 🇯🇲🇹🇷 (Jumbi, 133 Copeland Road, Peckham, SE15 3SN) Been waiting for months to try this place and it did not disappoint! Geniuinely so impressed and surprised by this amazing blend of cuisines (two of my personal faves, Turkish and Jamaican), and I would highly recommend for any occasion. Went with the girls and we had a ball, not least because it is set in one of our favourite south London music spaces (shoutout @jumbipeckham ♥️) Everything came out hot, steaming, fresh and fragrant and prices were fair. Here is what we had: 2) Saltfish Badedez Kofte - a saltfish fritter smothered in a garlic yoghurt sauce: so delicious! Salty, fluffy and a fab dish all round 👏🏻 3) Guava chicken - a solid fried chicken thigh in a hot and sweet guava glaze, balanced with a refreshing yoghurt dip. A super tasty and reliable bite! 4) Magarina Farinda - basically a deep macaroni cheese pie with caramelised onion and Turkish spices / flavours. This wasn’t my fave, (something about the combination of spices wasn’t making sense to my tastebuds) but the girls were living for this one! 5) Jurkish Doubles with jerk chicken - fabulous! Amazinggg trini flatbreads, filled with flavoursome salad, sauces, and tender jerk chicken. The oxtail doubles are next on our list 😋 6) Jurkish Chicken Kebab - a wonderful kebab and a generous serving of rice, bread, salad, pickles and sauce. Not a crumb left on this plate - an unsurpassable dish! 7) Curry Goat Manti - this dish epitomises what Jurkish is about and is truly inspired. This blend is a match made in heaven - big Turkish dumplings filled with succulent curry goat, surfing on a delightful curried butter sauce and yoghurt. CrossFit Games : The Open 2024 *Note to self for future years - no need to read it but a ‘Like’ would be appreciated * On a personal level, it’s been a good one in the 50-54 age group category (and all the workouts did suit me luckily)… 🇬🇧 1st 🥇 (657 athletes) 🇪🇺 4th (3119 athletes) 🌍 17th (10,400 athletes) 🌍 Top 6% for All ages (177,223 athletes) Many reasons have attributed to this, mostly because of surrounding yourself with the best coaches, like minded people and community at CrossFit B76 (thanks Ellie, Matt, Shaz, Nik, Josh & Zoe) and I can’t do it without them all. Also my focus in 2023 was to be injury free (knee and shoulder from mountain bike accident), prioritise every aspect of my health and enjoy my training. So I’ve… ➡️ Trained less but consistently and with purpose (and worked my weaknesses) & followed the programme we have for everyone at CrossFit B76. ➡️ Stayed on a strict carnivore diet for last 5 months to reduce inflammation, increase muscle, reduce body fat and improve performance ➡️ Had 2nd (and hopefully last) Cortisone injection in shoulder to speed recovery ➡️ Daily non-negotiable supplements to support goals (Creatine, Magnesium, Collagen, Inisitol, Fish Oils, L-Glycine & ReLyte Electrolytes) ➡️ Purchased Infrared Sauna to use daily to enhance recovery, wellbeing and performance (the benefits are numerous and significant) ➡️ Regular mountain bike adventures to use my fitness and have fun with Dean , Ellie & Luna 🐕 ➡️ Continued to love my job helping and enabling people to be awesome and created the best hour of their day, every day ❤️ In the grand scheme of things The Open isn’t important, but being and staying healthy & having your fitness for life is everything.
