I know it’s a long one, the trend I pinched it from is much shorter 😅 good luck if you get to him throwing me 🤪 Anyway, I honestly didn’t think I’d ever meet anyone ‘serious’ again. If you’re super close I will have told you some of the books I’ve read 😅 and you’ll have your opinions of some of my thoughts and ideas over the years. Many of you will know I really rate being single and I’ve not really been one of being sad about being a single parent. There are challenges - yes but when I was least expecting it he walked into our lives. He’s the most wonderful support. Getting in a relationship had taught me that their is so much love and laughter to be shared with someone else , and sharing the joy of my children regularly (not just on the internet) is pretty magic. Just thought I’d share those thoughts. I was scared of finding “the one” , of committing, of sharing .. I now feel safe to share our real life moments with you. Add maple syrup and process again into a sticky dough like consistency. Transfer into a cake pan and press firmly along the base. Place in the freezer while working on filling layer. Blend all filling ingredients, except pistachios, in a power blender until a smooth mixture forms. Add in pistachios and blend so that they are not fully blended and you can still see visible specs in the filling. Transfer the mixture into your prepared crust shell. Carefully smooth out the top to even it out. Sprinkle with crushed pistachios and dried rose petals. Freeze for 4-5 hours or overnight.   2. Vegan Almond Butter Brownie Vegan Almond Butter Swirl Brownies are just as delicious as they are beautiful! Topped with Raw Chocolate & Coconut Pili Nuts and almond butter come together in these delicious, fudgy treats. INGREDIENTS: 60g cup raw chocolate & coconut pili nuts 1/3 cup vegan butter or coconut oil 1/4 cup cocoa powder 1 teaspoon pure vanilla extract 1/2 date syrup 1/2 cup almond milk 1 cup spelt flour 1/2 teaspoon baking powder 1/4 teaspoon salt 1/2 cup chocolate chips TOPPINGS: 2 tablespoon Almond Butter 10g pili Nuts Dried rose petals (optional) INSTRUCTIONS: 1. Preheat oven to 176° degrees. Lightly grease an 8in x 8in square baking pan. 2. In a large boiling pan, add pili nuts, vegan butter (or coconut oil) and cocoa. Put on a low heat and melt until melted and smooth. 2. Stir in the vanilla and date syrup, then stir in the almond milk until smooth. 3. Add the flour, baking powder and salt to the bowl with the chocolate mixture. Stir with a wooden spoon until just combined. Fold in extra chocolate chips, if desired. 4. Transfer the mixture to the prepared pan, evenly. 5. Bake for 35-40 minutes. For best results, let the brownies cool completely before cutting. 6. Sprinkle almond butter on top of brownies using a fork and add decorate with rose petals(optional) and the remaining pili nuts.   3. Beetroot Dragonfruit Brownies 💜 Nutritious beetroot adds sweetness and juiciness to this healthier variation of brownie. I have also used gently dried dragonfruit from @kookyltd. Their dragon fruit has red-flesh and was just so appealing to use in my recipe bringing perfect bright colour and intense flavour. Red dragon fruit is also really nutritious as a source of carotene, Vitamin C and anthocyanins. It’s therefore great for boosting your immune system! 6 cooked and peeled beets (boil or bake yourself for better result) 1 cup oat flour ½ cup vegan butter, unsalted 60g cacao @forestwholefoods 60g Peruvian 72% Cacao Chocolate @therawchocolatecompany ⅔ cup date syrup 2 flax seed “eggs” 1 tbsp apple cider vinegar 1 tsp bicarbonated soda 1/2 tsp baking powder ½ tsp himalayan salt 1 tsp vanilla extract ⅓ cup flour ⅓ cup cacao powder @forestwholefoods ¼ tsp baking powder 1x Pack of gently dried dragonfruit from @kookyltd In a double boiler, melt the chocolate and vegan butter. Mix well then remove from heat and set aside. In another bowl, mix flax seed “eggs” until then add the molasses and date syrup. Mix again and then add beetroot, himalayan salt, half a pack of cut up dragonfruit, vanilla extract. Give it another mix and then add the cooled chocolate mixture into the bowl. Sprinkle in the baking powder, flour, and cacao powder and mix just until combined. Pour batter into an 8x8 baking pan lined with parchment paper. Bake at 180° for 20 minutes. Remove and cool for about 40 minutes. Decorate with dragonfruit by making a thin cut with a knife to insert a piece of fruit in each slice.   1. Well another amazing SUPERHERO day in Dunbar- as usual we are full of gratitude seeing our community pull together and put on an EPIC event! The sun shone and the capes flew and together we raised a mammoth £2248 towards surf therapy in Scotland Huge thanks to all our SUPER volunteers, surf clubbers and friends and family who came out today to join in the fun. A few special mentions and huge thanks to surf club granny Dorothy Moffat for sponsoring our burgers this year, and to Andersons Quality Butchers Of North Berwick for providing and delivering them. To Barry Mccormick for all the catering extras! To @finisterre in Edinburgh, @hmglamping Harvest Moon Holidays, @momentum_surf_school, The Royal Mackintosh Hotel, @ocean_vertical , Bowe Sports & Leisurewear for all the fabulous raffle prizes.   2. We are so stoked to be hitting the waves at @lostshore ! A partnership that is a decade in the making, ever since @andy_hadden volunteered at our Dunbar project and saw the transformative power that our surf therapy sessions can have on the lives of young people. It has been amazing for our surfers and volunteers to hit the waves and we are so excited for more. Big thanks to our volunteers who always bring the fun, kindness and compassion.   3. 🌊 We had a brilliant day yesterday @LostShore with @ComicRelief, @BBCScotland and @shappikhorsandi , who visited to see the impact of #SurfTherapy in action! Huge thanks to our @waveprojectscotland team for making this happen. With 1 in 5 young people now experiencing a diagnosable mental health challenge, early interventions like Surf Therapy have never been more important. Thanks to funders such as Comic Relief, we’re able to create a space where young people build confidence, make friends and feel part of a supportive community, all through the power of the sea and other blue spaces.   2. This is a mis-timed shot of me in front of the salt flats: I thought the self timer was set to 10 seconds, but it was set to 2. It conveys the occasional feeling which you get in the Camargue - which is that you’re in some sort of strange, windswept, wet desert.   1. I read somewhere they ‘they’ say the first year is the hardest year of marriage?! Well on the eve of 1 year I can say it’s been one of my fave years of my life!! Yes life throws curveballs but having this one by my side ready to take it all on, surf the stress away and get excited over what life has in store for us just makes every day so bloody magical! I’ve never met someone that just rides so hard for me being me, tries to finish my sentences and getting it wrong 100% of the time and loves me so much I can’t even explain! Bring on a weekend adventure to celebrate, time to make more plans and just get bloody hyped about how we got so lucky to meet in life 🥰

When your mum calls you up in fits of excitement because she just bought you both a camper 🤯🚐 Seriously though the shock and excitement getting that phone call was next level when it was never asked for, never even discussed, she just knew how much it would mean to us!! Our dream of a van to travel in has come and gone in the past few years with moving @plasticfreedom_ down, taking on a huge renovation, Dan going self employed and all of these completely depleting every last bit of savings 😂 Not to mention Dan commandeering our attempt at our first van build as his own work van and leaving my dreams of van adventures even further in the distance. We scrapped in the copper we ripped out of the house and immediately booked our tunnel crossing for Christmas for three weeks exploring Europe with our surfboards and snowboards and we couldn’t be more excited!! The countless hours we’ve spent getting giddy over where we can now take the whippets over the past few weeks has been wild and I can not wait to start ticking off mine and @wendinoy bucket list!! We’ve named her WINDY because she used to be rented out in the Lake District and it sounds like Wendi 🚐🧙🧙‍♀️🐶🐶

  3. Can not quite believe we had a little idea to look for a place we could move Plastic Freedom and have more space to run the businesses from to save money on all the separate rent we’re paying. Still wanting to be close to Newquay it seemed like it was going to be impossible and then about a month later we by chance saw one photo of this place, got a viewing before anyone else and had an offer accepted before it was officially on the market! We’re on the outskirts of Newquay, have the perfect size for Plastic Freedom and we have one hell of a project on our hands to make this the whippet family house of dreams! It may be years before we can afford to do everything we want but that’s the whole fun of this adventure and I really feel like there is some magic in the universe that nudges you along onto the path you’re supposed to be on! I can’t believe a pair of idiots now own a mini manor house by the ocean surrounded by every tree and plant that ever existed! 🌊🏡🌳

  3. Puppy life lessons to brighten up your Monday 🐶 ❤️ I’ve not been on it with posting this week and this is the reason why. Meet Frodo. He’s a Lakeland/Patterdale Terrier (I had to google those breeds because I don’t know much about dogs) but what I do know is that he is a blooming adorable and he’s very much loved by the whole family.
