Place the bulk of the leg on your knee and apply some pressure levering the lower leg down to the floor. Using the weight of the animal this opens up the joint slightly and makes your cuts more accurate. Pheasant/Partridge goujons are a go-to during the shooting season so here are 7 steps to achieve #GoujonGreatness 👨‍🍳 1️⃣ Breast - this can work with fresh or frozen breasts ✅ 2️⃣ Slice - into strips of roughly equal thickness, think chicken selects from maccies (who doesn’t like a chicken select?!) 🍗 3️⃣ Buttermilk - very important step! The acidity of buttermilk helps to break down tough muscle fibres whilst retaining moisture, this helps to tenderise the strips (shout out to @libbyround5 for teaching me this years ago 👊) - leave the breast for at least a couple of hours, preferably overnight if you can 🕰️ 4️⃣ Spices - admittedly I tend to freestyle it but find that adding salt, pepper, smoked paprika and garlic powder is the one👌🏻 try roughly for about 100g of flour per 4 breasts. 🌶️ 5️⃣ Toss - take the strips out the buttermilk and shake off excess, toss them in the spiced flour. ** For best results, once coated put them back in the fridge for half an hour or so, this helps the coating to properly stick and it won’t come off in the pan** 🍳 6️⃣ Fry - get those rascals in the pan!!! Important that the oil is really hot and fry for about 4 mins each side. 🔥 7️⃣ Season - channel your inner salt bae 🤌🏻 Then - Bon Appetit!   2. Cracker of a morning flight. I noticed a steady flight of geese into a nearby field whilst out duck shooting the other day so I decided to dust down the decoys for a change of pace. It’s a real novelty for me to decoy geese over a field,(I’m usually up to my knees in mud so this was much more civilized). There’s always that anxiety in the morning that the geese might not show but the birds came in like a charm. Normally I set a personal limit of 6 birds but I took a couple extra to try a few new recipes. Packed up early with the geese still piling in and left them undisturbed for the rest of the morning👌

  3. Mixed emotions for this cracker of a buck. I pulled the shot slightly resulting in a stressful few minutes and a follow up shot needed. Fortunately the buck only went 20 meters and the guide and I managed to dispatch it quickly. It’s a horrible feeling when things don’t go to plan. I’ve always heard that if you shoot enough deer, you’ll eventually lose one but this is as close as I’d want to come. At the time I felt pretty sick with myself but in truth, I’m also relieved it was over very quickly and that the animal was dispatched asap. I didn’t want to dress the post up as something it wasn’t. You do replay the situation over with a lot of “what if’s?”. In reality, the outcome could have been a lot worse. I’m relived the animal was dispatched very quickly,(the venison as a side factor is still useable) and hopefully that’s as close as I’ll ever come to losing a deer.

  3. This time 12 months ago I was in the last drive of the day on the shoot, when I had the call from the vet to say Lily had passed away. I held it together for the rest of the day but tears were shed on the drive to collect her. Still think about her all the time, and wonder what went wrong and why they couldn’t save her. How she went down hill so quickly at such a young age. Personally, I don’t believe there’s anything after this life, but if there was, I know she’d be waiting for me, just like she used to, looking out the window when I arrived home after I’d had the audacity to leave her behind. Having the new dog has helped, and I didn’t think I’d get a more devoted dog than Lily, but I was wrong! She’s gone, but definitely never forgotten.
