We’re making more joong (and mooncakes) in a few months, so we made a ton this time in preparation! How to make homemade salted egg yolks in BULK: Ingredients 120-150 large or x-large eggs ~1.5 gallons of water 2 containers of Morton’s iodized salt 1 cup 50% ABV baijiu (Chinese alcohol) A large bucket (5 gal) to store the eggs Directions 1. In a large pot, bring the water to a boil. 2. Gently wash the eggs with water, then let them drain completely. 3. Once the water is boiling, add the salt. Turn off the heat and mix to dissolve the salt. Let it cool and come to complete room temperature. 4. Meanwhile, pour the alcohol into a bowl. Carefully roll each egg in the alcohol, shake off any excess, then add it to the bucket. Try to fit them as carefully and tightly as possible. If an egg cracks, it won’t work so you should remove it. 5. Once the eggs are all placed and the salt water has cooled to room temp, place a plate on top of the eggs (to prevent them from floating), and slowly pour in the salt water until the eggs are completely submerged. Add more water if necessary. 6. Let sit in a cool place for 45-50 days. #saltedegg #chinesefood #zongzi #mooncakefestival

So many of you requested the classic version of this tapioca cake with just brown sugar, and this is actually the version that my grandma makes all the time. During Lunar New Year, we always like to include sweet treats (like this one) that symbolize sweetness in our lives (cantonese saying: “teem teem mut mut”) to come in the new year. (This dessert is completely gluten-free, because it only uses tapioca starch / flour!) ✏️ A few tips for making this recipe: -Steam on medium heat: just like steamed eggs, gentle heat is best for the smoothest surface! If you end up with wrinkles on a layer, try reducing the heat a bit. -Make sure to give the batter a mix every time before ladling into the dish, as the starch can settle at the bottom quickly. -The last few layers of the cake may require an extra minute or two of steaming. We’re preparing to make a lot more joong and mooncakes (for the upcoming Mid Autumn Festival) 🥮 This is definitely not the only way to make these (you can also do it without the water) but my parents have found that this way gets the prettiest egg yolks. How to make homemade salted egg yolks in BULK: Ingredients 120-150 large or x-large eggs 1.5-2 gallons of water 2 containers of Morton’s iodized salt 1 cup 50% ABV baijiu (Chinese alcohol) A large bucket (5 gal) to store the eggs Directions 1. In a large pot, bring the water to a boil. 2. Gently wash the eggs with water, then let them drain completely. 3. Once the water is boiling, add the salt. Turn off the heat and mix to dissolve the salt. Let it cool and come to complete room temperature. 4. Meanwhile, pour the alcohol into a bowl. Carefully roll each egg in the alcohol, shake off any excess, then add it to the bucket. Try to fit them as carefully and tightly as possible. If an egg cracks, it won’t work so you should remove it. 5. Once the eggs are all placed and the salt water has cooled to room temp, place a plate on top of the eggs (to prevent them from floating), and slowly pour in the salt water until the eggs are completely submerged. Add more water if necessary. 6. Let sit in a cool place for 45-50 days.
