  1. I’m a week late but our little Girl finally arrived the day after my birthday! She was born July 17th. We found out about two weeks prior to my due date that she had flipped to the beech position, and we ended up having to have a c-section which was absolutely the last thing I wanted but it wasn’t about me, it was a choice made to get her here as safely as possible. Every second of recovery is all worth it! My husband @blake_cornett has gone above and beyond everything I expected of him during this time for both me and Mila, we are the two luckiest girls in the world to have you.   1. Crawfish étouffée is one of my favorite dishes to cook. It’s really simple and full for flavor. ✨ There are a million in one ways to make a étouffée, but this is how I specifically make crawfish or shrimp étouffée. ✨I make chicken and sausage étouffée slightly different. ✨ To make a roux In general, you want to do a 1 to 1 ratio, part flour and one part oil. Or you could use butter or bacon grease, depending on what you prefer and the flavor you want in the end. ✨ For an étouffée you want to get your roux to a deep light brown color, similar to the color of peanut butter. Make it even darker for a gumbo. ✨Add all your fresh seasonings to cool down the roux. ✨ For any seafood étouffée I like to use a seafood broth as well. Since I did crawfish, I made my own shrimp broth, which results in a slightly red hue to the étouffée as opposed to using chicken or beef broth. ✨ Make sure to put the crawfish in towards the end so they don’t become overcooked.   2. You can’t go wrong with some butter beans and rice! A true New Orleans favorite. ✨ When cooking beans on the stove, you want to soak them in water overnight to shorten the cooking time. I like to add some fresh thyme and garlic to mine during this step for a better flavor. ✨I like to make my with andouille sausage and smoked Turkey necks, but some people use smoked ham hocks instead, but you do what you prefer. ✨ Since I’m cooking this on the stovetop, I like to cook the beans with the meat. So once the beans are done, then the meat will be fall off the bone tender. ✨After letting it simmer on low for a few hours, I like to finish it off with a few tablespoons of butter afterwards. ✨ These will be best butter beans you’ll ever have. ✨ Serve it with some rice and some green onion on top. ✨ If you want the full recipe, let me know if I should post it on my website. #creole #creolefood #creolerecipes #louisiana #neworleans #butterbeans #louisianacreole #risascuisine
