Topped with butternut squash and rose harissa 🔥 Sandy’s favorite was the supreme pizza. Absolutely loaded with toppings, (like 10 or 11 different toppings), it was crazy good. Their dough is made fresh daily creating this amazing airy, crispy, buttery and cheesy crust. Its a level of dankness you need to go experience for yourself. House made marinara, along with their house made dressings were bold and delicious. The house made ranch and green goddess were fire 😋 Slices and whole pies start at 3pm daily and made to order. If it’s not rich, clear, and simmered for hours, it’s not worth the stomach real estate, nah’mean? In Portland, everyone pointed me to Ha VL @havl.noodles or Rose VL—two sister restaurants started by William Vuong and the late Ha, aka Christina Luu. I hit Rose VL on a Tuesday, now run by their youngest son, Steven Vuong, and his wife, Helen Huynh. The choices were beef pho, with that savory depth I crave, and the Rose VL Special—an umami-packed, surf-and-turf bowl that shocked me with flavor like an electric eel. Steven and Helen are generous, down-to-earth individuals. They insisted I try their Cau Lau, a dry noodle dish from Hoi An, which reminded me of Korean bibim-guksu, perfectly blending textures. Their story, like their food, is built on resilience. After collaborating with the Americans during the Vietnam War, their family endured hardship, but their decades of perseverance led to the success of their restaurants in Portland, Oregon. And my goodness, on DAY ONE, L’Echelle has it all absolutely dialed! 🍽️ What We Ordered: • FRENCH ONION SOUP - spring onion, sherry, alpage gruyère, crouton || the most perfect I’ve found stateside is Chef @mikapdxoxo’s French Onion Soup • SALADE VERTE - greens, herbs, vinaigrette || this style of salad is ubiquitous in Parisian cafes and bistros, and it’s a simple masterpiece • SKATE MEUNIÈRE - brown butter, capers, lemon || this more than scratches the itch I have for Sole Meunière, which isn’t easily found in Portland • SEARED DUCK BREAST - olive, prunes, demi glace || textbook Magret de Canard ala South of France • STEAK AU POIVRE - @carmanranch ny strip, green peppercorn || the best version I’ve enjoyed in the PNW, no contest • VICHY CARROTS - nantes carrots, butter, parsley || solid side, named after the town of Vichy in France, well known for high quality water (sounds very Oregon) • FRITES - kennebec, malt vinegar aioli || BEST FRIES IN PORTLAND. PERFECTION. Made in-house. 🍾 What we drank: brought a bottle of @champagnegimonnetgonet L’Origine Grand Cru Blanc de Blancs from Le Mesnil-sur-Oger (within Côte des Blancs subregion in Champagne) || Very dry, fine mousseux, crispy minerality, balanced salinity — I got hints of Meyer lemon or lemon meringue The wine list at L’Echelle is EXCELLENT.
