And my goodness, on DAY ONE, L’Echelle has it all absolutely dialed! 🍽️ What We Ordered: • FRENCH ONION SOUP - spring onion, sherry, alpage gruyère, crouton || the most perfect I’ve found stateside is Chef @mikapdxoxo’s French Onion Soup • SALADE VERTE - greens, herbs, vinaigrette || this style of salad is ubiquitous in Parisian cafes and bistros, and it’s a simple masterpiece • SKATE MEUNIÈRE - brown butter, capers, lemon || this more than scratches the itch I have for Sole Meunière, which isn’t easily found in Portland • SEARED DUCK BREAST - olive, prunes, demi glace || textbook Magret de Canard ala South of France • STEAK AU POIVRE - @carmanranch ny strip, green peppercorn || the best version I’ve enjoyed in the PNW, no contest • VICHY CARROTS - nantes carrots, butter, parsley || solid side, named after the town of Vichy in France, well known for high quality water (sounds very Oregon) • FRITES - kennebec, malt vinegar aioli || BEST FRIES IN PORTLAND. PERFECTION. Made in-house. 🍾 What we drank: brought a bottle of @champagnegimonnetgonet L’Origine Grand Cru Blanc de Blancs from Le Mesnil-sur-Oger (within Côte des Blancs subregion in Champagne) || Very dry, fine mousseux, crispy minerality, balanced salinity — I got hints of Meyer lemon or lemon meringue The wine list at L’Echelle is EXCELLENT. French-leaning, of course. The champagne portion is all grower producers. GET YOUR CLAWS OUT is a short fashion film centered on the importance of women voting in the midterms next Tuesday comes. This one-minute piece by director and photographer Holly Andres (Vanity Fair, The Cut, Refinery 29) was a dream collaboration for our woman-owned business and focuses on the hands of three different women, each stopped at a red light as the radio blasts news about the end of Roe v. Wade, as they wait for the green light to cast their ballots. Holly reached out to me with her idea for the movie two weeks ago. We’ve worked together for many years in my life as a fashion editor (and even won awards together), but we’ve also spent those years trying to aid non-profits, show up at protests together, and wanted to use our skill set to make something more than a typical fashion film. This is the skill set we have. We know how to tell stories and make pretty pictures, but we can also use that to send a message. And our message today is women matter as humans who deserve to be in charge of our bodies, and our healthcare, and we matter as a voting block. Please get out there next week and vote like our lives depend on it because they do. I hope you like this film we made. And I hope you are inclined to share it. If it makes one more person remember to turn in a ballot or nudge them to a polling place, it’ll be worth all the work.
