Secret sea cave in Gozo. No path. No sign. Only the sea. 📍 L-Għar ta’ Santa Katarina, near Xlendi Hidden along Gozo’s south coast, west of Xlendi Bay, L-Għar ta’ Santa Katarina cuts into the Sanap cliffs like a cathedral made of raw rock. It feels completely different from the smooth, pale caves you normally see around the islands. This place is not easy to reach. The sea is the only way in. From Xlendi Bay, you can reach it by kayak or boat, following the cliffs for around one kilometre until the cave opens into a wide shaded chamber facing deep turquoise water. ✔️ Best time to visit? Go on a calm day, ideally from late morning to midday when the water is at its clearest. ✔️ How to get there? Access is only by kayak or boat from Xlendi Bay. There is no walking path to the cave. ✔️ What to do? Swim, snorkel around the rocky edges, and take in one of Gozo’s rawest hidden coastal landscapes. ✔️ Bonus tip: Check the swell and wind before going. Bring water, proper grip shoes, and do not attempt it alone if you are not confident in the sea. This is one of those places that still feels completely untouched.   1. AD | DewFresh Gooey Scotch Egg & Bacos Crumb 🇲🇹🐽 This has to be my most ambitious reel yet… and probably one of my favourite recipes I’ve ever shared. I’ve loved Scotch eggs ever since I was a kid. Mum used to make them for us as a special treat, and they were always something I looked forward to. So when it came to creating this recipe, there was only one choice for the filling, our famous DewFresh pink sausages. And because nostalgia is a powerful ingredient, I took things one step further and blended Bacos Snacks into the crumb for an extra hit of smoky bacon flavour and crunch. The stuffing: DewFresh sausage meat, sage, rosemary, thyme, onion, garlic, ground nutmeg, coriander and cumin, salt & pepper. The crumb: Bacos Snacks, breadcrumbs & panko. Served with hot chilli butter and a garlicky citrus yoghurt that cuts through all that richness perfectly. Comfort food, childhood memories, and a little bit of Maltese nostalgia all wrapped into one bite.   2. AD | Nocciola Snails from Bebbuxellu Snail Farm, Mushrooms, Crunchy Maltese Bread, Gremolata & Bone Marrow Butter. It only took me a day to edit this 🤣 Please share this with someone who’d actually eat snails 😂💛 I ain’t gonna lie, I haven’t cooked snails since school, it’s been bloody ages! I wanted to try something a little different from the traditional way we cook them here in Malta. I really need to make these again on a cold winter’s day, maybe with a little gravy next time. I find it’s much easier to get that perfect tenderness if you de-shell them first. Chuck them into some lightly salted simmering water for a few seconds and they’ll come right out of their shells cleanly. Then pan-fry them with garlic, onions, and white wine. If you have some bay leaves and fresh thyme, throw them in too, I ran out. Reduce it down, then top up with water or vegetable stock and simmer until meltingly tender, about an hour. For the bone marrow butter, roast the bones, scoop out the marrow, add it to softened butter, and blitz until smooth. For the gremolata: parsley, garlic, lemon zest, and olive oil. I’m probably missing something, but hey, beggars can’t be choosers. Grill some sourdough bread and make sure it’s bloody good bread. You want plenty of holes and pockets to soak up all those juices.   3. Turkey Roulade with Chestnut & Cranberry Stuffing I’ve started filming my food lately, as still images rarely capture it properly. This year, I decided to document the making of my turkey roulade. The filling is a rich blend of pork, chicken, Maltese sausage, white pudding, thyme, onions, garlic, honey, coriander seeds, rehydrated chestnuts, dried cranberries, breadcrumbs and egg. Each roulade is wrapped in bacon, gently slow-cooked in a water bath for several hours, then finished with a quick pan-fry in butter for colour and depth. Served with buttered cavolo nero, silky pomme purée and a deep, glossy demi-glace. Wishing everyone a very Merry Christmas and Happy New Year. I never thought I would be saying this but today marks 1 year completely alcohol free. 🥂🚫✨ Looking back I see a totally different person and I’m getting to know and loving this new version of me more and more every day. The physical change is clear in the pictures but honestly, the mental transformation has been even bigger. I know it’s not easy to stay away from temptations while working in the music industry but I chose to put my mental health first above anything and everything because I knew there was magic on the other side and that’s exactly where I am now. Definitely not looking back! I honestly really enjoy siping on a nice cup of coffee or a mocktail while playing a gig, I promise it’s also fun! Just don’t drop coffee on the cdjs.
