  2. C H E R R Y . T O M A T O . & . K A L E 🥬 . Serves 2-3 Kcal 94 (Fat 5g, Carb 11g, Protein 3g) . Ingredients: 200g Sliced Cherry Tomatoes
100g Fresh or Frozen Kale, Chopped 1 Celery Stalk, Chopped Finely Half an Onion, Chopped 3 Garlic Cloves, Minced 750ml Water 2 Tsp. Tomato Paste 1/2 tsp Raw or Unrefined Sugar 1 tbsp of Olive Oil 1 kallo Vegetable Stock Cube 750ml Hot Water Cracked Black Pepper Salt to Taste Handful of Fresh Parsley 2-3 Sprigs of Fresh Thyme 1 Tsp. Dried or Fresh Oregano (Preferably Fresh) 2 Dried Bay leaves Method: In a medium sized pot heat olive oil and add chopped onion and garlic cloves and cook on high. Once onions are translucent, add chopped celery and cook for another 1-2 minutes. Add cherry tomatoes, salt, pepper, oregano and allow to cook until tomatoes have softened. Then add kale, parsley and thyme. Meanwhile, mix stock cube in the hot water. Add little at a time of the mix to the pot. Scrape the bottom of the pot. Once all the water has been added, drop in bay leaves, tomato paste and sugar then turn down the heat to simmer and allow to cook for 30-40 minutes. Once cooked, remove the thyme and bay leaves. Transfer the sauce mixture to a blender and blend until smooth, thick and ready to serve. . *This sauce is so versatile it can be used as pasta sauce or even a base sauce for pizzas. .
