  1. Raise your hand if, at first glance, you thought those were bones on that meat. Don't be shy. Raise it. 🙋🏾‍♀️ Time for the truth now. I actually skewered those meat chunks on sugarcane sticks. Yup, you read right. Instead of wooden or metal sticks, I cut sugarcane as thinly as I possibly could to grill my salt, pepper and EVOO seasoned filet. Now, we don't usually swallow sugarcane pieces. But I did eat my fair share of those alongside my meat, which turned out to be my favorite part about this preparation. And, no, I did not choke. If anything, I now understand how my 8 month old brother had been able to swallow a chunk of sugarcane without choking on it as a baby.   2. Mayi ak aransò revisited. It's no secret that I have a thing for polenta. Through the years, you've discovered my polenta chips, my polenta toasts and polenta bites which I top with almost everything my palate fancies: shrimp, cheesy dips, spreads, so on and so forth. It should, thus, be no surprise that today I serve you my version of this local staple: polenta with salted smoked herring. I prepared a creamy polenta that I spread in a pie pan, topped with cheese and cooked in the oven until slightly crispy. I then topped my "polenta" pie with prepared herring, a tomato/tomatillo salsa and pickled shallots. The actual recipe will find its way on the blog by this weekend. In the meantime, I hope these picture and video will inspire you to get creative in the kitchen.

  3. You've read all about my taste for fried green tomatoes. I love the juicy crispiness they bring to any dish. In the past, I have added them to a Spicy Grilled Shrimp Sandwich with Caramelized Bacon, and enjoyed them on their own with my go-to mayo. For @cafe36haiti , I fusioned these two ways of eating them into a scrumptuous yet light salad. Cafe 36's new menu features this Fried Green Tomato Shrimp Salad made of layers of batter fried green tomato slices and spicy grilled shrimp smothered in my favorite spicy lime mayo.
