Easy, macro-friendly, one-pan dinner Meatball Ingredients: 1 lb lean ground turkey or beef ¼ cup breadcrumbs (soaked) I used 1/4 milk 1 egg 1 small onion, finely chopped 2 cloves garlic, minced 2 tbsp dried parsley 1 tsp dried oregano 1 tsp cumin Salt and pepper to taste Pan Ingredients: 3 medium potatoes, chopped 1 white or red onion, sliced Fresh parsley or mint (optional) Light Lemon Vinaigrette: ¼ cup lemon juice ¼ cup olive oil 1 tsp oregano 1 clove garlic, minced Salt and pepper to taste Directions: 1️⃣ Preheat oven to 375°F. Mix meatball ingredients and form 12 meatballs. 2️⃣ Whisk together the lemon vinaigrette. 3️⃣ Add potatoes and onion to a 9×13 dish. Season with salt and pepper. 4️⃣ Place meatballs between potatoes.   2. 💔Long Post💔 Papa Vaughn, Daddy-O, Dad, Grandpa - you’re gone and it doesn’t feel real. This man, my best friend, was the best. If you knew him, you know this. And, if you know me you know that he was so much more. Papa Vaughn raised me. My parents split and I lived with him. I was a teenage girl and he navigated that with grace humour and love…sometimes a touch of anger. Ha! He was my rock. It didn’t matter the problem - he was there with great advice (which I likely didn’t take). He was there when there were tears ‘Hey, hey, hey-Kiddo, it’s gonna be okay. It’s gonna be okay’. So simple - but when he said it I knew I would be. He loved Jamie, my husband, fiercely. He was so proud of the man he is and the kind heart he has and the father he is to Austin. My dad was fascinated by the group of friends Jamie has (there are many) and adored playing golf with them - the shit shows he must have witnessed post game. Ha! He knew you (James) could handle me at my best and at my worst. He knew you would be my rock when he couldn’t be anymore. He knows I’m in good hands. My dad was most proud of his grandson, our Austin. There was no greater joy or reason to make better choices - in his mind- than that wee man. Boats, mini golf, Florida, walruses, ice cream and drawing together - we promise he will always remember you, Grandpa. Always. The last 15 days have been a nightmare. I curled up on my bed yesterday and told my husband I wanted to just lay there, alone, cry and close my eyes until it was over. Then it was. I’m broken. My best friend, my dad, my person - is gone. Hug those you love tighter, love a bit harder, live your life to the fullest - because there is never enough time. Dad, I hope you never hit a bad shot on the dream course in the sky. Say hello to Grandma and Grandpa, Wobey, Duncan and I hope you meet Jamie’s dad, Brian. Finally, be nice to Porkchop. You loved that ‘dumb dog’ and you know it. Daddy-O, I will always be your princess and you will always be the king. 💔 I love you, Papa Vaughn. PS thank you to everyone for you support already. It means so much to us.

  3. C H A N G E It keeps us on our toes. It keeps things interesting. It helps us adapt in certain situations… Like mine. I’ve been hosting mornings for nearly 3 years on Z. Over the past year a lot has happened behind the scenes that you may or may not know about. Either way, life has been tricky. Getting up at 3:30 am is hard on anyone. I went to sleep at the some time as my 6 year old. I would get 3-4 hours a day with him (less if there were activities) during the week. I didn’t get to wake up and eat breakfast with him or take him to school. That’s morning show life… And, that’s why C H A N G E happened. I decided to come off of the morning show so that I could thrive in my favourite job - being his mom. Now, when he wakes up I’m home with him. When he isn’t well at 4am I’m home. Now, when he asks me to walk him to school - I can. I get to spend more time with my son and that’s the most important thing in the world, to me. Now you know a bit about my C H A N G E.
