  1. Staying warm in the cold starts with one thing. Layering the right way. Most people think you just throw on a big jacket and call it good, but that is how you end up cold, sweaty, and miserable on the trail. Here is the simple system that actually works in winter. Start with your base layer. This is the layer that sits against your skin and its job is to pull sweat away from your body. Sweat is what makes you cold in the winter so you need materials like synthetic or merino wool. Never wear cotton because it soaks up moisture and stays wet. Next is your mid layer. This is your insulation and its job is to trap heat. Think fleece, light puffies, or grid hoodies. You can adjust the thickness of this layer based on how cold it is and how hard you are working. If you feel yourself sweating, take this layer off before you get soaked. Your outer layer is your shell. This protects you from wind, snow, and moisture. A good shell keeps the elements out and lets the moisture from your base layer escape. Hard shells give the most protection and soft shells give more breathability so pick based on the conditions. The goal is to stay warm and dry without overheating. Add layers when you stop moving and remove layers right when you start to sweat. Do not wait until you are drenched because your body will dump heat fast once you stop. Layering is not complicated. You just need the right pieces and a little awareness of your body. Learn what works for you and winter hiking becomes a lot more enjoyable.

Build Series, part 2 of 8: Our galley 🌮🍳🥗👨‍🍳 ___ “We want an oven, large front-load fridge, big sink, filtered water, and enough storage to not have to use bins/grocery bags stuffed on the floor.” I’m sure Anne and I came to this conclusion almost immediately, yet did not really think about how we’d actually fit it in the space we’d allocated with blue tape on the raw metal van floor 😂. ____ Yet here we are, with a functional kitchen that has all our requirements without compromise ☺️! It was a tricky unit to build; once we decided we wanted the 17” Atwood (Dometic) stainless steel range/oven, it eliminated the ability to put a fridge beneath the stovetop. This forced me to figure out a way to put the fridge beneath our sink, which made both the depth of the sink and plumbing the drain somewhat complicated. We ended up using an 85 degree bend beneath the drain, connected to a HepVo valve, which is a straight-line equivalent of a P-trap. ___ The fridge is an Isotherm 85L Stainless Steel ‘Clean Touch’. I installed the Smart Energy Control Kit from Isotherm to make the unit even more efficient. We’re still getting the temperature/dip switch settings dialed in perfectly, but overall we’ve been very happy-it keeps the 🥕🥦 fresh, the 🍺 cold, and the 🍦frozen. ___ The three doors beneath the oven were SO TIME CONSUMING to build. I’ve never mounted slides nor built drawer boxes. While this was a challenge, the most challenging part was trying to fit my body in all kinds of gymnastic positions to install the slides/magnetic catches.

  3. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Let’s talk about COOKING 🍳 🥑🌮 in the van! Here’s a bit about how/what we cook and a few details about our kitchen elements/amenities. We would *love* some tips and ideas you guys have for meals and cooking in the van.💡 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Just like when we had our old Four Wheel Camper, we get many questions about the kitchen. 🤷‍♂️ “Do you guys really cook real meals in there?” “Do you just heat up soup and coffee inside and then just cook outside?” Our answer: we actually cook just like at home, sometimes more extensively on the road! Anne is a vegan curry wizard. Yellow, green, coconut...you name it she can make an amazing version. She also bakes potatoes and veggies in the oven. I really appreciate this aspect of her healthy lifestyle starting to slowly rub off on me. I’m a bit more simplistic with my cooking-pasta, salads, tacos (repeat 😂). I’m the only one who eats meat, so we end up cooking vegan/vegetarian more often than not. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ We love our little kitchen. It’s very compact yet functional-I think this focused nature of it often makes me more motivated to cook a meal than at home. Our 3-burner Dometic stove actually can fit 3 pots/pans, and the oven fits a pretty good size baking tray or pizza. The 80 liter Isotherm fridge keeps us going with fresh veggies and all other perishables for a week (Anne is a magician 🎩 at filling it to the MAX!). In terms of appliances, we run a Nutribullet blender and little Black and Decker electric coffee maker daily off the inverter 👍. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I’d like to expand beyond tacos, salad, and pasta 😝. Does anyone have tips on simple yet wholesome meals they love to cook in their rig/while camping? We would love to hear some suggestions!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ *Along my trend of more reality less posed, this is a look inside the REAL state of the van during a dinner. This was in Joshua Tree in a 25 degree snow storm. Don’t worry, our Propex had the inside around 70 😆.
