We were safe with our church family at a hurricane shelter (our church) but experiencing a direct hit and the Eye of the storm was something I won’t forget!   3. ~ Swedish Cream ~ I made a few tweaks to a recipe to customize it. Enjoy! Serves 6. 1 T. Knox unflavored gelatin. Mix it with 1/4 cup cold water. Let it stand for a minute. In a saucepan, combine the soaked gelatin, 2 cups Heavy Cream & 1/2 cup Cane Sugar. Cook over medium heat. Stir and Mix until the gelatin dissolves. Approximately 5 minutes. Transfer that to a bowl and cool for 10-15 Minutes. Then mix in: 1 cup sour cream 1 cup vanilla Greek yogurt (or plain) A dash of vanilla and almond Stir then pour into individual cups. Refrigerate until firm. Good to make a day ahead! Berry Sauce : 1 1/2 cup fresh or frozen raspberries 1 cup fresh or frozen blueberries 2 cups water 1/2 cup cane sugar To make the sauce : combine the berries, sugar and water in a saucepan. Bring it to a boil, then reduce your heat and simmer for 10-15 minutes. You want the fruit to be soft and cooked. Strain the mixture to remove as many seeds as possible. Put the strained sauce back in the saucepan to add your thickener. Mix 2 Tablespoons water and 2 T therma Flo or cornstarch. Mix it until smooth. Add that into the berry sauce and bring back to a boil. Stir it constantly. It will thicken slightly. Remove from heat and cool. When you’re ready to serve, pour a bit of sauce on top of the white cream in the cups. I went a bit too thick on the sauce in my goblets. So do a bit less IMO. Add fresh berries on top and mint leaves to garnish. Serve and enjoy! Merry Christmas! . #christmasparty #swedishcream #partydessert #christmasdessert

  2. 💍 8.29.20 💍 “Now unto him that is able to do exceeding abundantly above all that we ask or think, according to the power that worketh in us.” Ephesians 3:20 Once upon a time, God orchestrated this day to be His special day. As a little girl, I spent all my life dreaming and planning on how I wanted this day to be. Many Pinterest boards later and I looked back and thought, “I’m all set.” Little did I know that the Author had something else in mind. Never in a million years would I have imagined to be planning a wedding during a global pandemic. But all along God knew. “Guests wearing masks? No more than 10 people? Fear of our wedding venue being closed down? Retrospectively, God gave us the wisdom to choose a gorgeous church venue in Newport Beach which just so happened that a day or two before our wedding the county lifted its restrictions. God knew. Since day one, God was our wedding planner. Months before the wedding, I was given the amazing opportunity to become one of @davidsbridal ambassadors and was so humbled to work with them especially on our special day. God knew. These are only a few instances where God showed up and validated our marriage union and showed His loving kindness to us. One day, I’ll keep sharing more of these God moments we experienced days leading up to the wedding. August 29th 2020, a beautiful string quartet, 25 ft veil, gorgeous floral table arrangements, rose monogram wall, but you see none of my “planning details” mattered. What matters and what still humbles me to this day is that God penned 8.29.20 to be a day where He was glorified and praised for His sovereignty, provision and guidance.
