It is episode 2 and we are making draadjesvlees a famous Dutch beef stew! Save and share this to someone who has to make this! Ingredients - 1-1.5 kg beef rib - 4 onions - 2 bay leaves - 6 cloves - Little splash of red wine vinegar - Salt - Pepper - 3 tbsp flour - Butter - 2 pieces ontbijtkoek - 500-600 ml beef stock (bouillon cubes are fine) 2. Season both sides of the beef with salt, pepper and flour. Sear in a pan with butter and set aside. 2. Slice the onion in thin half rings and add to the same pan. Fry down for 5-10 minutes. 3. Add the flour, tomato paste, red wine vinegar, bay leaves, cloves, beef stock and salt and pepper to taste. 4. Bring to a light simmer and add the beef back, cover and let simmer for at least 3-4 hours or until it falls apart (the longer the better). 5. When the beef is almost done, stir the ontbijtkoek through it. This will make the sauce thick. 6. Serve with the mash, pickles, any vegetables you like and top with some fresh parsley. Mash - 1.5 kg potatoes - 100 ml milk (more or less) - Knob of butter (optional) - Salt - Pepper - Dijon mustard 1. Boil the potatoes in salted cold water until fork tender. 2. Strain and push (when still hot) through a fine sieve into the same pan. 3. Add salt, pepper, dijon mustard, milk, butter and any other spices (such as nutmeg) you like to taste. Pickle - Red cabbage - 200 ml vinegar - 200 ml water - 3 tbsp sugar - 1 tsp salt 1. Bring equal parts water and vinegar, to a boil with some sugar and salt. 2. Finely slice the red cabbage in strips and add to a mason jar. Pour over the liquid, add a bay leaf, chili flakes or any other spices. Flour Mixture:
- 1 Cup of Wheat flour 
- 1.5 cup Water Rest of Ingredients 
- 2+kg Lamb shanks (around 4-6)
- 400g Ghee
- 1 Large Red Onion - Chopped 
- 1 Tbsp Minced Ginger 
- 1 Tbsp Minced Garlic 
- 1 tsp ground nutmeg
- 1.5 tsp Ground Ginger 
- 3 tsp Chilli powder
- 1 tsp turmeric 
Garnish 
- Ramen to serve 
- Ginger - Julienne 
- Green chillis 
- Coriander

Instructions:
Nihari Masala: 1. Use a spice blender to blend all the Nihari Masala ingredients until smooth. Flour Mixture: 1. In a bowl, whisk together the water and flour until fully combined. Spices - Nihari Masala 1. In a small bowl, combine your nihari Masala along with 1.5 tsp Ground Ginger, 3 tsp Chilli powder and 1 tsp turmeric Main Recipe: 1. Heat oil in a large pot over medium-high heat. Add the onions and fry for 5 minutes. Then, add the garlic and ginger, frying for another 5 minutes. 2. Add the meat and 2 tbsp of Nihari Masala, cooking for 10 minutes. 3. Pour in enough water to just cover most of the meat. Cover and cook for 1 hour. 4. Stir in 3 tablespoons of the Nihari Masala and the flour mixture. Reduce heat to medium-low, cover, and cook for 2-3 hours, stirring every 10 minutes. 5. Skim off the oil and transfer it to a separate bowl. (Keep this oil for plating.) 6. Serve the Nihari with ramen, naan, or rice. Garnish with your preferred toppings and drizzle the reserved oil over the curry. 7. Finally... 8.   1. This fermented Amla pickle (in brine, not oil) is a winter staple that packs in both Vitamin C + probiotics in the most natural and easy to prepare form. I’m always stunned at how the humblest of local produce contains exactly what the body needs for optimal health- like Amla which happens to be one of the richest sources of Vitamin C, with just one small amla containing more Vitamin C than 2 whole oranges. If we look closely, there’s wisdom in our cultural practices like आवळीभोजन- a bygone practice that both my father and father-in-law recall from their childhood days, when women would not just worship but also have a meal under the Amla tree on Kartik Navami. It’s Kartik Navami tomorrow, and while we might not have the time or an amla tree to sit and have a meal under, surely we can go into our local markets to get some amla to make our own annual tradition of valuing, cooking with and consuming this local superfood. Here’s the simple recipe for this quick pickle that is ready in just 3-4 days, stays in the fridge for upto 6 months and makes a great healthy side for meals. Wash and clean the amlas.  Now my mother-in-law’s recipe pricks the amlas all around with a fork, so the salt solution seeps through, but you can also make slits.  Make the brine- the ratio is 30 gms (2 heaping Tbsp) salt for 1 litre of water. Mix this well. Filtered water is fine. My mother-in-law eyeballs the salt (and later checks the saltiness and adjusts), so I checked the ratio with fermentation queen Payal @kobofermentary Now add this brine to a clean glass jar and drop in the pricked amla. Don’t fill the jar to the brim- keep some space for the bubbles. Keep in a cool, shaded place for 3-4 days- tasting and mixing it each day. After 3 days the astringency should have reduced and you should see small bubbles.   2. Nivigrya, a steamed savoury snack that’s a by-product of the Modak-making process haven’t become as popular as Modak- but they should!
I love these as much as modaks, and always ask Aai to make extra Ukad, specially for Nivigrya (also called Nivagrya by some). Modak-making is always a high-stakes situation- with the pressure of the Modak having to be perfect + ready on time for the Naivedya, but making Nivigrya is relaxed of rigid rules. We typically shape these into thin sticks that taper towards the end, because Baba likes to pop them in the oven for a crisp snack. Others simple flatten them into discs, while my sister Sangeeta Tai- the Modak expert you see here likes to make mutkule/ fistfuls. The recipe is quite straightforward, and doesn’t have exact proportions, since the quantity of Ukad you’re left with will differ each time, so use this as a template. What we like to add to the ukad is: Coriander leaves, finely chopped Green chilies, finely chopped/ ground Cumin seeds (untoasted, also, don’t add cumin powder since the colour gets muddy) Salt I will share the proportions to make the Ukad though, which are as below: In a pot, combine 1/2 cup water + a blob of white butter/ ghee + a pinch of salt Let this come to a boil As soon as it comes to a boil, lower the heat and add in 1/2 cup of rice flour and quickly stir it in. Combine for about 30 seconds. Cover the pot with a tight-fitting lid and turn off heat. Let this sit for 10 mins. After 10 mins, transfer to a paraat/ wide bowl, and knead- the dough ill be very hot at first, so knead with the back of a flat (steel) vaatii/ bowl, and once it reaches a manageable temperature, knead till it reaches a soft uniform consistency. Now mix in whatever you like in savoury spectrum- also great for breakfast or 4 pm snack. A (nearly) forgotten recipe from Maharashtra that uses the slender, spongy stems attached to Alu/ Colocasia leaves used to make all wadi/ patra, this preparation makes for a unique side that looks and tastes so different than the regular raitas. Sharing the recipe shared by Tai Atte- an innovative, intrepid cook and a treasure trove of my family’s traditional recipes who I learn SO much from every time I get to cook alongside her. Ever tried this preparation? Here’s the recipe, try it! Stems from 5 Alu/ Colocasia leaves- washed, smooth outer layer peeled, then snapped into bite-sized pieces and steamed for 7-9 mins. While the stems are steaming, Crush 1 small green chili with some salt and keep aside Also, prepare a tempering by heating 1 tsp Ghee and tempering it with Scant 1/4 tsp cumin seeds Heeng Take this off the heat, then tip in the ground green chili Once the steamed stems have cooled, combine these with - The prepared tempering - 1/2 cup Thick Yoghurt- IMPORANT: Use sour yoghurt, since Alu can be khajra/ itchy, and combining it with sour yoghurt neutralises the itch - Salt- to taste, the tempering already has salt that was used to grind the green chili - Sugar- as much as is needed, since the yoghurt is sour - 2 Tbsp coconut (fresh/ frozen) - Corainder leaves, finely chopped Mix well, taste and see if you need to adjust anything, and serve as a unique side #marathifood #traditionalrecipe #indianfood #vegetarian #vegetarianrecipes #bhareet #lostrecipes #indianrecipes
