Recipe - 900g chicken tenderloins - ~50g flour - 1 tbsp paprika - 1 tbsp onion powder - 1 tbsp garlic powder - 1 tbsp salt and pepper - 1 tbsp cornflakes - 5 eggs Hot honey coating - 200g hot honey (recipe below) - 2 sprigs thyme * ~1 tbsp lemon juice * 1 tbsp butter Sauce: * 3 tbsp sour cream * 2 tbsp mayo * 2 tbsp ketchup * smoked paprika * a few dashes of buttermilk * 1 tsp lemon juice * 1 tsp salt and pepper 1. Mix the flour with half the herbs and coat the chicken well with it. Set aside for later. 2. Crack the eggs into a bowl and whisk in the remaining herbs. Crush some cornflakes in another bowl. 3. Dip the chicken in the egg first, then press it into the cornflakes. Spray both sides with olive oil and air fry for about 10 minutes at “Max crisp, 220-240 degrees Celsius”. 4. Make the coating by mixing the hot honey, butter, thyme, and salt and letting it warm through. Once the heat is off, add a little lemon juice. 5. For the sauce, combine the mayo, sour cream, and ketchup. Add lemon juice, smoked paprika, salt, and pepper to taste. Thin with buttermilk. 6. Remove the tenders from the air fryer and toss with the hot honey. 7. Serve with the sauce and enjoy! Hot honey - 200g honey - 4 sprigs thyme - 1-2 sprigs rosemary - 1/3 tsp fennel seeds - 15-25g chili flakes * ~1 tbsp lemon juice * Salt and pepper 1. Add all ingredients except the lemon juice to a saucepan and simmer gently for at least 30 minutes. (Do not allow to boil.) 2. Pour into a jar and let cool.

Slowly drizzle in the water while whisking until the sauce is velvety and pourable. Set aside. For the herb salad, slice the cucumber into thin half moons, pick the coriander leaves and finely slice the green tops of the spring onions. Combine in a bowl. Chill in iced water if you want more crunch. Add the garlic, gochujang, Korean chilli flakes, dark soy, rice vinegar, sugar and the white parts of the spring onions to a blender. Blitz until smooth and set aside. Heat a large frying pan over high heat. Add the oil, then the chicken mince. Press it flat and let it brown deeply on one side before breaking it up. Cook through, then pour in the chilli sauce. Stir and let it bubble for 2–3 minutes until thick, sticky and fully coating the chicken. Cook the noodles according to pack instructions. Drain and toss immediately with the miso peanut sauce and a splash of warm noodle water until glossy and well coated. Divide the saucy noodles between bowls. 300g Skin-On Chicken Thighs
 200g Cherry Tomatoes
1 Carrot
1 Cucumber
2 Eggs
3 Spring Onions
1 Shallot
20g Coriander FOR THE DRESSING
 2 Limes
 2 Tbsp Fish Sauce
 1 Tbsp Soy Sauce
 1 Tbsp Rice Vinegar
 1 Tbsp Gochugaru 1  tbsp sugar  Method Start by boiling the eggs. Bring a saucepan of water to the boil, gently lower in the eggs and boil for 8 mins. Transfer to cold water. Once cool, peel and quarter. Remove the bones from the chicken thighs, if needed. Pat the skin dry and season with salt and pepper. Place a cold non-stick frying pan over a medium heat. Add the chicken thighs skin-side down and press down with a small saucepan or lid to weigh them. Cook for 8-10 mins until the skin is deeply golden and crisp. Flip and cook for 3 mins more. Rest the chicken on a plate. Add the cold sushi rice to the same pan with the chicken fat still in it. Press it down into the pan and let it crisp over a medium heat for 5-7 mins without stirring, until golden underneath. Turn off the heat and break into shards. Prep the veg: Quarter the cherry tomatoes, julienne or shave the carrot. Smash the cucumber and cut into bite-sized chunks. Finely slice the spring onions and shallot.
 Make the dressing: juice both limes into a bowl, then stir in the fish sauce, soy sauce, rice vinegar and gochugaru. Slice the chicken. Toss all the veg with the chicken and dressing in a big bowl. INGREDIENTS FOR 2 FOR THE CHICKEN 400g Boneless, Skinless Chicken Thighs 90g Red Miso 40g Honey 20g Soy Sauce Juice of ½ Lemon ½ Tsp MSG (optional) Salt Black Pepper FOR THE RICE 100g Sushi Rice 125ml Water 50g Spinach 1 Garlic Cloves 10g Butter TO SERVE Egg Yolk Chives Lemon Wedges METHOD Heat the grill to high. Add the spinach, butter, water and garlic to a blender and blitz until vivid green, 1 minute or so. Rinse the sushi rice under cold water a few times until it runs clear, then drain. Add to a small saucepan with the spinach water and bring to the boil. Once boiling, cover with a tight-fitting lid, turn the heat down to low and cook for 12 mins. Turn off the heat and leave to steam (lid on) for another 12 mins. In a mixing bowl, whisk together the miso, honey, soy sauce, lemon juice, MSG (if using), a pinch of salt and some black pepper. Slice each chicken thigh into three strips, then toss through the miso marinade. On a tray, lay out the chicken and spoon over any extra sauce. Grill for 6–8 mins until charred and cooked through. Serve the spinach rice in bowls, top with the grilled chicken and spoon over any sauce from the tray. Here is the recipe: Ingredients 2 cups tapioca flour ½ cup jasmine rice flour 1 cup sugar 1 tsp salt 1 13.5-oz can coconut milk 1 cup water Food coloring of choice Neutral oil or nonstick cooking spray Preparation 1. In a large bowl, combine the tapioca flour, jasmine rice flour, sugar, and salt. Whisk well. 2. Add the coconut milk and water and whisk until well-combined. 3. Divide the batter between 6 small bowls, about ⅓ cup per bowl, leaving any remaining batter in the original bowl. Add your desired food coloring to each small bowl and mix well to achieve the desired shades. Leave the remaining batter in the original mixing bowl white. 4. Fill the bottom of a steamer pot with water. Cover the lid of the steamer with a towel, then place the pan over high heat and bring the water to a boil. Reduce the heat to medium. 5. Grease a loaf pan with neutral oil and use a paper towel to spread evenly. 6. Mix the color of batter you’d like to use for the first layer, then pour into the prepared loaf pan. Cover and steam for 5 minutes, until starting to set. Pour ¼ cup of the white batter over the colored layer, then cover and steam for 5 minutes more. Repeat with the remaining colors, alternating each layer with the white batter and steaming between each addition, until you have 12 layers total. Before adding each layer, make sure to mix the contents of the bowl again. 7. Remove the cake from the steamer and let cool for 1 hour. 8. Once cooled, turn the cake out of the loaf pan and cut into squares. 9. Enjoy!
