It is episode 2 and we are making draadjesvlees a famous Dutch beef stew! Save and share this to someone who has to make this! Ingredients - 1-1.5 kg beef rib - 4 onions - 2 bay leaves - 6 cloves - Little splash of red wine vinegar - Salt - Pepper - 3 tbsp flour - Butter - 2 pieces ontbijtkoek - 500-600 ml beef stock (bouillon cubes are fine) 2. Season both sides of the beef with salt, pepper and flour. Sear in a pan with butter and set aside. 2. Slice the onion in thin half rings and add to the same pan. Fry down for 5-10 minutes. 3. Add the flour, tomato paste, red wine vinegar, bay leaves, cloves, beef stock and salt and pepper to taste. 4. Bring to a light simmer and add the beef back, cover and let simmer for at least 3-4 hours or until it falls apart (the longer the better). 5. When the beef is almost done, stir the ontbijtkoek through it. This will make the sauce thick. 6. Serve with the mash, pickles, any vegetables you like and top with some fresh parsley. Mash - 1.5 kg potatoes - 100 ml milk (more or less) - Knob of butter (optional) - Salt - Pepper - Dijon mustard 1. Boil the potatoes in salted cold water until fork tender. 2. Strain and push (when still hot) through a fine sieve into the same pan. 3. Add salt, pepper, dijon mustard, milk, butter and any other spices (such as nutmeg) you like to taste. Pickle - Red cabbage - 200 ml vinegar - 200 ml water - 3 tbsp sugar - 1 tsp salt 1. Bring equal parts water and vinegar, to a boil with some sugar and salt. 2. Finely slice the red cabbage in strips and add to a mason jar. Pour over the liquid, add a bay leaf, chili flakes or any other spices.  1 Tbsp Gochugaru 1Ā  tbsp sugarĀ  Method Start by boiling the eggs. Bring a saucepan of water to the boil, gently lower in the eggs and boil for 8 mins. Transfer to cold water. Once cool, peel and quarter. Remove the bones from the chicken thighs, if needed. Pat the skin dry and season with salt and pepper. Place a cold non-stick frying pan over a medium heat. Add the chicken thighs skin-side down and press down with a small saucepan or lid to weigh them. Cook for 8-10 mins until the skin is deeply golden and crisp. Flip and cook for 3 mins more. Rest the chicken on a plate. Add the cold sushi rice to the same pan with the chicken fat still in it. Press it down into the pan and let it crisp over a medium heat for 5-7 mins without stirring, until golden underneath. Turn off the heat and break into shards. Prep the veg: Quarter the cherry tomatoes, julienne or shave the carrot. Smash the cucumber and cut into bite-sized chunks. Finely slice the spring onions and shallot.
 Make the dressing: juice both limes into a bowl, then stir in the fish sauce, soy sauce, rice vinegar and gochugaru. Slice the chicken. Toss all the veg with the chicken and dressing in a big bowl. Add the spinach, butter, water and garlic to a blender and blitz until vivid green, 1 minute or so. Rinse the sushi rice under cold water a few times until it runs clear, then drain. Add to a small saucepan with the spinach water and bring to the boil. Once boiling, cover with a tight-fitting lid, turn the heat down to low and cook for 12 mins. Turn off the heat and leave to steam (lid on) for another 12 mins. In a mixing bowl, whisk together the miso, honey, soy sauce, lemon juice, MSG (if using), a pinch of salt and some black pepper. Slice each chicken thigh into three strips, then toss through the miso marinade. On a tray, lay out the chicken and spoon over any extra sauce. Grill for 6–8 mins until charred and cooked through. Serve the spinach rice in bowls, top with the grilled chicken and spoon over any sauce from the tray. Thinly slice the spring onions. In a bowl, mix together the dark soy sauce, vinegar or mirin, honey or sugar, sesame oil, garlic, ginger and spring onion. Add the beef and toss to coat. Leave to marinate for 10–15 mins. If you don’t have sliced beef, you can pop it in the freezer for 20 minutes to help to slice it thinly. Slice the cucumber into ½cm rounds. Toss with the salt and leave to rest for 10–15 mins. Rinse well and pat dry. Grate the garlic and slice the spring onion, then toss with the vinegar, gochugaru, sugar, garlic and spring onion. Set aside. Add the rice to a saucepan and rinse until the water runs clear, then drain. Pour in 150g water, bring to the boil, then cover with a lid and steam over a low heat for 12 mins. Take off the heat, fluff with a fork, then cover and rest for another 10 mins before fluffing again. Weigh out 150g cooked rice per portion. Fry your eggs. Heat a large frying pan until ripping hot. Add the oil, then the beef in batches. Sear for 1–2 mins without touching to get that deep caramelisation, then stir-fry until just cooked — 2–3 mins total. Spoon 150g rice into each bowl.
