  3. The simplest & most delicious Mango Cheesecake... A recipe that uses just 4 ingredients for the cheesecake filling, this is the quickest, eggless, no bake mango cheesecake I've ever made! I've got a load of DMs and recipe requests for mango based desserts now that the mango season is here, so I'm sharing another delicious, no fuss recipe. I really liked how this came together, almost like magic. I have a high speed blender so I just threw everything into it and had a smooth cheesecake batter in a couple of minutes. Alternatively, you can puree and strain the mango separately, then whisk everything together with a hand blender to get a smooth batter. The white chocolate adds enough sweetness and helps the cheesecake set. Hope you try this recipe soon! #mangoseries No Bake Mango Cheesecake Makes one 4" cheesecake Serves 2 Biscuit base 50g Digestive biscuits 15g clarified butter/ghee, room temperature Cheesecake filling 135g mango, diced 125g white chocolate, melted 150g cream cheese, softened 35g cream, 25% fat Method Biscuit base Run the biscuits in a blender to fine crumbs. Add the clarified butter / ghee and process briefly to mix. Turn into a 4" foil lined dessert ring, flatten into a base and freeze until firm. Cheesecake filling Blend all 4 ingredients together in a high speed blender until smooth. Assemble Demold the biscuit base, secure an acetate sheet around the frozen biscuit base and spoon in the filling. Set in the freezer for 3-4 hours until firm, peel off the acetate sheet and leave the cheesecake to set in the fridge overnight. This was shot in really low light, and the photo didn’t come out the way the moment actually felt at all. I edited this in @lightroom on Desktop and was able to bring it back to something that feels way closer to what it was like being there. Shaping the light, cleaning up the grain, and turning a split second underwater into something I can actually hold onto. That’s what I love about it.   2. Working on the edit for my 1st book which I plan to bring out in 2022/2023. The book will consist of +- 80 of my favourite street photographs taken over the last few years. Intuitively capturing the real / unstaged is to me one of the most magical forms of photography and I think in a way we need it to understand ourselves a little more, I know I do. In my street work I want to elevate the mundane into something special, often to a place where a number of my images turn out feeling almost staged and cinematic, while the scenery in real life wasn't particularly special and probably has gone unnoticed to other passers-by. In the visual world I create shapes and colors are a very important language, equally as important as the human abstract elements you will find throughout my work. Instead of sending one narrative message across, my work is about intuition, a sentiment and showing a different perspective on the unstaged and real moments. But it’s also about giving the viewers the freedom to discover and create their own feelings and stories within those frames, like I do when I'm photographing. Above all it’s sharing the detailled beauty that can just be found in the everyday which to me no staged moment can compete to. I’m looking forward putting my time and love in creating the book and will keep you updated when the time is there!

From the viewing platform at 1322 m above the sea level he would graciously look down upon Lake #Brienz and Lake #Thun with top view of #Interlaken nestled in between, or admire the #Eiger, #Monch and #Jungfrau. 🐾How to get to Harder Kulm? (see my footage at the last swipe) 🚶‍♀️A short walk from Interlaken Ost railway station to the Harder railway valley station. 🚋Get up with the funicular (which has been operational for more than 100 years and is one Interlakes's listed buildings). The 1449 m steep mountain journey largerly goes thru the forest, surmounting 731 metres in altitude at an incline of 64%. The Harder railway takes 10 minutes to reach the Interlaken Hausberg. 🏃‍♀️Walk for around 10 minutes and you will reach the The Harder Kulm Panorama Restaurant and the Two lakes bridge viewing platform are an enticing place to enjoy the espectacular views especially during #sunset (as in my first photo) 🎟Make sure you take up and down ticket since there is no ticket counter at the top. 👨‍🍳The staff are friendly 🥘 The food are excellent (p.s. the chicken nuggets are so tasty here) Book a table at the restaurant ahead, can be very crowded. ⚠️During the winter, the funicular is not functioning and the restaurant is close. The village of #Brienz, which takes the name of the lake, is a perfect place to go for #photography or natural beauty lover. 🏞 An incredibly beautiful lake that has beautiful turquoise water clash getting its color from washed-out glaciers release the finest sediment, the so-called glacier milk which is carried to the valleys. 🔍What to do? 1.Boat trips and many types of water sports are possible from almost every village. 2. Panoramic train trip from Interlaken Ost - Brienz 3. Kayak or stand up paddle board 4. Stay near to the lake as lot of villas or hotels are available around. 🗺There are countless interesting sights and mountain peaks in the area. The best known are #Brienzer Rothorn, Aaareschlucht, #GiessbachFalle, #SchynigePlatte, city of Interlaken and the ridge path above the southern shore. 🎟 I had #eurail pass and cruise in #LakeBrienz was part of the package. ⏳ 2-3 hours round trip for cruise or 1-2 hours for train 🛳 Such an enjoyable cruise on Lake Brienz with the steamship.
