  3. The simplest & most delicious Mango Cheesecake... A recipe that uses just 4 ingredients for the cheesecake filling, this is the quickest, eggless, no bake mango cheesecake I've ever made! I've got a load of DMs and recipe requests for mango based desserts now that the mango season is here, so I'm sharing another delicious, no fuss recipe. I really liked how this came together, almost like magic. I have a high speed blender so I just threw everything into it and had a smooth cheesecake batter in a couple of minutes. Alternatively, you can puree and strain the mango separately, then whisk everything together with a hand blender to get a smooth batter. The white chocolate adds enough sweetness and helps the cheesecake set. Hope you try this recipe soon! #mangoseries No Bake Mango Cheesecake Makes one 4" cheesecake Serves 2 Biscuit base 50g Digestive biscuits 15g clarified butter/ghee, room temperature Cheesecake filling 135g mango, diced 125g white chocolate, melted 150g cream cheese, softened 35g cream, 25% fat Method Biscuit base Run the biscuits in a blender to fine crumbs. Add the clarified butter / ghee and process briefly to mix. Turn into a 4" foil lined dessert ring, flatten into a base and freeze until firm. Cheesecake filling Blend all 4 ingredients together in a high speed blender until smooth. Assemble Demold the biscuit base, secure an acetate sheet around the frozen biscuit base and spoon in the filling. Set in the freezer for 3-4 hours until firm, peel off the acetate sheet and leave the cheesecake to set in the fridge overnight. From the viewing platform at 1322 m above the sea level he would graciously look down upon Lake #Brienz and Lake #Thun with top view of #Interlaken nestled in between, or admire the #Eiger, #Monch and #Jungfrau. 🐾How to get to Harder Kulm? (see my footage at the last swipe) 🚶‍♀️A short walk from Interlaken Ost railway station to the Harder railway valley station. 🚋Get up with the funicular (which has been operational for more than 100 years and is one Interlakes's listed buildings). The 1449 m steep mountain journey largerly goes thru the forest, surmounting 731 metres in altitude at an incline of 64%. The Harder railway takes 10 minutes to reach the Interlaken Hausberg. 🏃‍♀️Walk for around 10 minutes and you will reach the The Harder Kulm Panorama Restaurant and the Two lakes bridge viewing platform are an enticing place to enjoy the espectacular views especially during #sunset (as in my first photo) 🎟Make sure you take up and down ticket since there is no ticket counter at the top. 👨‍🍳The staff are friendly 🥘 The food are excellent (p.s. the chicken nuggets are so tasty here) Book a table at the restaurant ahead, can be very crowded. ⚠️During the winter, the funicular is not functioning and the restaurant is close. The village of #Brienz, which takes the name of the lake, is a perfect place to go for #photography or natural beauty lover. 🏞 An incredibly beautiful lake that has beautiful turquoise water clash getting its color from washed-out glaciers release the finest sediment, the so-called glacier milk which is carried to the valleys. 🔍What to do? 1.Boat trips and many types of water sports are possible from almost every village. 2. Panoramic train trip from Interlaken Ost - Brienz 3. Kayak or stand up paddle board 4. Stay near to the lake as lot of villas or hotels are available around. 🗺There are countless interesting sights and mountain peaks in the area. The best known are #Brienzer Rothorn, Aaareschlucht, #GiessbachFalle, #SchynigePlatte, city of Interlaken and the ridge path above the southern shore. 🎟 I had #eurail pass and cruise in #LakeBrienz was part of the package. ⏳ 2-3 hours round trip for cruise or 1-2 hours for train 🛳 Such an enjoyable cruise on Lake Brienz with the steamship.   1. Bri, Bucket, and Dagwood: a love story for the ages. I’ve been photographing them for nearly ten years now, but these are different. When I began dreaming of this new project, I knew they had to be my first subjects. Dogs getting older is one of the most beautiful and deeply upsetting parts of life. To love a dog is to know you’re welcoming eventual heartbreak. I used to cry every birthday starting when my Charlie boy turned 5, all the way until his 14th, but none of it prepared me for the first one without him. Since then, I’ve been dreaming of a photography project focused on the connection we share with our old dogs. The ones who have been through the weeds of life with us, many for over a decade. I’ve photographed human love stories for 10+ years and hope to capture many more, but this type of love story has always been an undercurrent in my heart. I’m so beyond excited to finally announce what I’m cheekily calling Senior Sessions 🐾 A photo session to document this moment in time together, your connection, the details of them you want to never forget. The way your hands feel in their fur, the grey around their nose, the shape of their ears. The way they fit in your arms, the way you relax when their neck is resting on yours. I want to capture the tenderness and love. These sessions are not formal, not human portraiture, but a window into your life together, just as it is right now. 45-minute Senior Sessions are open for booking now in Moab, Utah starting in January.   3. I’m so proud of our tiny desert town. People of all ages showed up today to a location that isn’t trivial to access for a peaceful protest to support the thousands of public lands employees (many Moab locals included) who were wrongfully terminated by DOGE in the name of efficiency while billionaires continue to receive tax cuts. Make no mistake, public lands in the US are under attack. This administration isn’t finished with their plans, and things will only get worse as they take steps toward resource extraction (such as drilling) in places that were previously designated for conservation and recreation. After a certain point, these things aren’t reversible. We don’t have time to wait for a better president. We must take action now. Call your reps. Show up for protests. Make your voices heard. @outdooralliance is a great resource for actionable steps to take. It takes a lot of work to maintain these places for hundreds of thousands of visitors to enjoy. Donate to organizations such as @friendsofarchesandcanyonlands & @accessfund who are doing work to make up for the understaffing. And, if you visit public lands, be sure to follow @leavenotraceorg principles, be patient with park employees, and do your part to make sure these places are here for generations to come.
