Shout outs to the first few who guessed correctly: @ocetheguy1 @jen_surine @fabi28.03 I'm really excited to incorporate AI into my editing workflow more this year 👩🏻‍💻 For this video we're using DAIN to interpolate the frames. DAIN stands for Depth-Aware video frame Interpolation - it uses AI to estimate the depth of a video, and with this information uses more AI to interpolate between frames with insane accuracy. The result is WAY smoother than traditional ways of interpolating frames, which are less sophisticated techniques that only use 2D data (e.g. optical flow). DAIN isn’t perfect (you can see some artifacts around my hands and the sand) but I find the result incredibly impressive. I've mostly seen DAIN be used to increase frame rates on animations or create artificial slow motion. But I haven’t seen it be used to create "impossible" movements, so I was excited to try and test that. Over the last month, I shot over 100 test clips to figure out which movements worked best. I worked closely with @jperl who wrote a custom program to batch run DAIN. Batch running allowed us to iterate and test much faster. I would send @jperl a bunch of clips, he'd batch run them overnight, and then I'd review them in the morning before trying another round of tests. Mix everything except for butter block on Speed 2 on KitchenAid for 5 min. 2. Let rise for 45 to 60 min until at least double in size. Degas and refrigerate overnight. 3. Make butter block (15cm x 20 cm). Refrigerate. Day 2 4. Degas and roll dough out to 15cm x 32cm. Freeze the dough to 32F (0C). 5. English Lock-in. Align the butter block to one end of the dough so that it covers 2/3 of the dough. Stretch and fold 1/3 of the dough to cover half of the butter block. Fold the remaining 2 layers (dough +butter) over dough layer. Insert a cut in the creases of the fold after rolling to about 1cm. 6. Roll out to 15cm x 45cm. Trim edges, 3-fold. Roll out to 1 cm. Insert cut in creases. Chill as necessary. 7. Roll out to 20cm x 40cm. Trim edges, 3-fold. Roll out to 1 cm. Insert cut in creases. Chill as necessary. 8. Roll out to 31cm x 40cm (4 - 4.5 mm thickness). Rest for an hour in the fridge. 9. Cut out 9.5cm x 9.5 cm. Stack 6 squares until the total weight is about 250g-275g. Load into cube pan and cover. 10. Proof at 82F/28C until jiggly for 3.5 - 4 hours until the dough almost fills out the entire pan. Just peak through the crack 👀 11. Preheat oven to 425F (220C). Once the cube is in the oven turn the oven down to 375F (190C). Bake for 35 min. Crack open the lid. Bake for another 5 min.
